1 (29 ounce) can sliced peaches, with juice
1 (18.25 ounce) package yellow cake mix
½ cup margarine
1 cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour canned peaches into a 9x13 inch baking pan; make sure juices cover peaches, if not add a small amount of water to just cover fruit. Mix peaches with 1/2 cup of the sugar and sprinkle cinnamon to taste into mixture.

2 tablespoons butter
4 cans (15-1/4 ounces each) sliced peaches, drained
1-3/4 cups sugar, divided
3 teaspoons vanilla extract, divided
1 teaspoon crystallized ginger, finely chopped
1/2 teaspoon ground cinnamon
1 cup shortening
1/4 cup packed brown sugar
1 large egg, room temperature
1 teaspoon almond extract
2-1/2 cups all-purpose flour
1 tablespoon cornstarch
1 teaspoon baking soda
1/2 teaspoon baking powder
Optional: Chopped pecans, coarse sugar and vanilla ice cream

Steps:

  • Preheat oven to 350°. Melt butter in a 12-in. cast-iron or other ovenproof skillet over medium heat. Add peaches, 3/4 cup sugar, 2 teaspoons vanilla, ginger and cinnamon. Cook and stir until peaches soften and begin to break down, about 10 minutes. Remove from the heat., In a large bowl, cream shortening, brown sugar and remaining 1 cup sugar until light and fluffy, 5-7 minutes. Beat in egg, almond extract and remaining 1 teaspoon vanilla. 1/2 cup cold butter

2/3 cup granulated sugar
1 tablespoon cornstarch
1 cup and 2 tablespoons all-purpose flour, divided
2 cups old-fashioned oats
3/4 cup dark brown sugar
1 1/2 tablespoons cinnamon
1 teaspoon kosher salt
1 cup unsalted butter, cut into 1/2-inch cubes
1/2 cup chopped pecans, optional

Steps:

  • Place peach slices in a large mixing bowl and toss to coat in the vanilla extract. In a separate bowl, whisk together sugar, cornstarch, and 2 tablespoons all-purpose flour. Dump sugar mixture onto peaches, and toss the peaches until they are evenly coated. Set aside for 30 minutes.
  • In the bowl of a stand mixer, combine remaining 1 cup flour, oats, brown sugar, cinnamon, and salt. Mix to combine.
