Number Of Ingredients 9

1 tbsp. extra-virgin olive oil
4 boneless skinless chicken breasts
kosher salt
Freshly ground black pepper
2 cloves garlic, minced
1 shallot, chopped
4 large peaches, sliced
1/4 c. balsamic vinegar
1/3 c. torn fresh basil

Steps:

  • In a large skillet over medium heat, heat olive oil. Season chicken with salt and pepper and cook until golden and no longer pink, 8 minutes per side. Transfer to a plate. Add garlic and shallot to skillet and sauté 2 minutes. Add peaches and cook until softened, 5 minutes more. Pour in balsamic vinegar and simmer until slightly reduced, 2 minutes. Stir in basil. Serve chicken with balsamic peaches.

Tips:

  • Choose ripe peaches: Using ripe, juicy peaches will give your dish the best flavor. Look for peaches that are slightly soft to the touch and have a sweet aroma.
  • Use high-quality balsamic vinegar: A good balsamic vinegar will have a thick, syrupy consistency and a sweet and tangy flavor. Avoid using balsamic vinegar that is too thin or watery.
  • Don't overcrowd the pan: When searing the chicken, make sure to give each piece enough space in the pan so that it can brown evenly. If you overcrowd the pan, the chicken will steam instead of sear.
  • Cook the chicken until it is cooked through: Use a meat thermometer to make sure that the chicken is cooked to an internal temperature of 165 degrees Fahrenheit.
  • Reduce the balsamic vinegar sauce until it is thick and syrupy: This will help to intensify the flavor of the sauce and make it more flavorful.
  • Serve the chicken with your favorite sides: Peach balsamic chicken can be served with a variety of sides, such as roasted vegetables, mashed potatoes, or rice.

Conclusion:

Peach balsamic chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of sweet peaches and tangy balsamic vinegar is sure to please everyone at the table. With just a few simple ingredients, you can create a flavorful and memorable meal that your family and friends will love.
