Kosher salt
1 pound cranberries, thawed if frozen

Steps:

  • Combine the cider, sugar, apple, allspice berries, peppercorns and 1/2 teaspoon salt in a medium saucepan over medium-high heat. Bring to a boil and cook, stirring once, until the apple starts to fall apart and the liquid is syrupy, 20 to 25 minutes.

  • Strain through a medium-mesh sieve into a bowl, pressing on the solids; smooth the top. Let cool 30 minutes, then cover and refrigerate until set, at least 2 hours.

Tips:

  • Choose ripe, fresh peaches and apricots. This will ensure that your cider has the best possible flavor.
  • Use a clean, sanitized fermenting vessel. This will help to prevent contamination and ensure that your cider ferments properly.
  • Maintain a consistent fermentation temperature. The ideal temperature for fermenting hard cider is between 65-75°F (18-24°C).
  • Be patient. Hard cider takes time to ferment, so don't expect to be able to drink it right away. Give it at least 4-6 weeks to ferment, and then let it age for an additional 2-3 months for the best flavor.

Conclusion:

Making peach and apricot hard cider is a fun and rewarding experience. With a little patience and attention to detail, you can create a delicious, refreshing cider that you and your friends will enjoy. So what are you waiting for? Get started today!
