PEA AND PEANUT SALAD/APPETIZER

Pea and Peanut Salad/Appetizer image

This was prepared by Marcie Reynolds at our February, 2012, meeting.

Provided by Club Recipes

Categories     Other Salads

Number Of Ingredients 7

10-14 oz frozen peas, cooked, still slightly firm, cool
1/2 pt sour cream
1 can(s) (small) spanish peanuts (about 1 1/2 - 2 cups)
1/2 tsp garlic salt or more to taste
1/2 tsp horseradish or more to taste
1/2 tsp lemon juice
1/2 Tbsp mayonnaise

Steps:

  • 1. Combine all ingredients and chill before serving.
  • 2. Very similar to recipe served in well known retaurant in Battle Creek, Michigan.

Tips:

  • For the freshest flavor, use young, tender peas. You can find them in the spring and early summer.
  • If you can't find fresh peas, frozen peas are a good substitute. Just thaw them before using.
  • Peanuts add a delicious crunch and nutty flavor to the salad. You can use roasted or unsalted peanuts.
  • Feel free to add other vegetables to the salad, such as chopped carrots, celery, or cucumber.
  • For a lighter salad, use a vinaigrette dressing. For a richer salad, use a mayonnaise-based dressing.
  • Serve the salad immediately or chill it for later.

Conclusion:

Pea and peanut salad is a refreshing and delicious side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. So next time you are looking for a healthy and flavorful salad, give this recipe a try.
