1 large egg
1 1/2 cups smooth peanut butter (not natural)
2/3 cup Concord grape jelly

Steps:

  • Whisk the all-purpose flour, whole-wheat flour, baking powder and salt in a medium bowl. Beat the butter, granulated sugar, brown sugar and vanilla in a large bowl with a mixer on medium-high speed until light and fluffy, about 5 minutes. Beat in the egg until combined, then beat in the peanut butter until smooth. Reduce the mixer speed to low and beat in the flour mixture until just combined. Turn out the dough onto a piece of parchment paper and pat into a rectangle. Top with another piece of parchment and roll out the dough into a 1/4-inch-thick rectangle. 3/4 cup granulated sugar, plus more for rolling dough
2 large eggs
3/4 cup (6 ounces) cream cheese, softened
1/2 cup (1 stick) unsalted butter, softened
1/2 cup raspberry jam
Pinch of kosher salt
2 cups powdered sugar

1/2 pound (2 sticks) unsalted butter, softened, more for greasing baking sheets
1 cup sugar
3/4 cup peanut butter, chunky or smooth
1 egg
3 cups all-purpose flour, more for work surface
Pinch salt
1 teaspoon baking powder
1 tablespoon milk, or as needed
1 teaspoon vanilla extract
1/2 cup fruit jam or jelly

Steps:

  • Use an electric mixer to cream together the butter, sugar and peanut butter; add egg and beat until well blended.
  • In a bowl, combine flour, salt and baking powder. Add dry ingredients to wet, adding a little milk as necessary to make dough just soft enough to handle. Stir in the vanilla.
