Time 50m

Yield 12 pieces of cake, 12 serving(s)

Number Of Ingredients 10

1 (18 ounce) box yellow cake mix
1/3 cup oleo
1 egg
3 cups mini marshmallows (Use after cake is baked)
2/3 cup corn syrup
1/4 cup oleo
1 (12 ounce) package peanut butter chips
2 teaspoons vanilla
2 cups Rice Krispies
2 cups salted peanuts

Steps:

  • Mix all but marshmallows together.
  • Bake in ungreased 9x13-inch pan for 12 to 18 minutes at 350°.
  • When baked and while still hot, put marshmallows on top.
  • Then add the following topping:.
  • Heat in medium pan: Corn syrup, margarine, peanut butter chips and vanilla, stirring constantly.
  • Pour over top of all layers when everything has been layered.
  • Put 2 cups of Rice Krispies over that and then 2 cups salted peanuts on top.
  • Tastes just like a Payday candy bar.

Tips:

  • Prepare Ingredients: Before starting, ensure all ingredients are measured accurately and at room temperature for better incorporation and a smooth batter.
  • Use Quality Ingredients: The quality of your ingredients will significantly impact the final result. Use fresh butter, eggs, and real buttermilk for a richer flavor and moist texture.
  • Creaming Butter and Sugar: Creaming butter and sugar together until light and fluffy is crucial for creating air pockets, resulting in a light and airy cake crumb.
  • Mix Dry Ingredients Thoroughly: Whisk the dry ingredients (flour, baking powder, baking soda, and salt) together in a separate bowl to ensure even distribution and to avoid lumps in the batter.
  • Alternating Wet and Dry Ingredients: When adding the wet and dry ingredients to the creamed butter and sugar mixture, alternate between the two, starting and ending with the dry ingredients. This prevents overmixing and helps maintain the air incorporated into the batter.
  • Proper Mixing: Mix the batter until just combined. Overmixing can result in a tough and dense cake. It's okay to have a few lumps; overmixing will develop the gluten in the flour, leading to a chewy texture.
  • Baking Temperature: Preheat your oven to the correct temperature before placing the cake batter in. This ensures even baking and prevents the cake from sinking in the middle.
  • Toothpick Test: To check if the cake is done baking, insert a toothpick into the center. If it comes out clean or with just a few moist crumbs attached, the cake is ready.
  • Cooling and Frosting: Allow the cake to cool completely before frosting. This prevents the frosting from melting and ensures a smooth and even application.

Conclusion:

Payday cake is a classic Southern dessert with a moist, tender crumb and a rich, decadent frosting. By following these tips and the detailed recipe instructions, you can create a homemade Payday cake that will impress your family and friends. Remember to use quality ingredients, mix the batter properly, and bake it at the correct temperature for a perfect result.
