- In a food processor or blender, process the cookies until finely crushed. Set aside 2 tablespoons of crumbs for topping., In a large bowl, beat cream cheese, butter and sugar. In a bowl, whisk the milk and pudding mix for 2 minutes. Add to cream cheese mixture; mix well. Fold in whipped topping., Place half of the cookie crumbs in 2-1/2-qt. container or bowl; top with half of the pudding mixture. Repeat layers. Sprinkle with reserved crumbs. Refrigerate until serving.

- Put the sweetened condensed milk, half-and-half, lime juice, lime zest, and salt in a bowl and whisk until thoroughly combined.
- If using conventional molds, divide the mixture among the molds, snap on the lid, and freeze until solid, about 5 hours. If using glasses or other unconventional molds, freeze until the pops are beginning to set (1 1/2 to 2 hours), then insert the sticks and freeze until solid, 4 to 5 hours. If using an instant ice pop maker, follow the manufacturer's instructions.
- Spread the graham cracker pieces on a large plate. Unmold the paletas and press each side into the graham crackers, coating completely.
DAY BEFORE PAY DAY FRIED RICE
This fried rice uses leftover vegetables and meat--a great way to use leftovers for a dish that can be ready in about 30 minutes. It tastes so good that my son and husband fought over the last helping!

- Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Pour in the eggs; cook and stir until scrambled and firm. Remove from wok, and set aside.
- Put remaining 2 tablespoons of oil in the wok and turn heat up to high. Stir in rice until each grain is coated with oil. Stir in chicken, celery, carrot, peas and green onions. Reduce heat to medium, cover and allow to steam for 5 minutes. Stir in scrambled eggs and soy sauce, and cook until eggs are heated through.

LEMON COOKIE PIE (PAY HELADO DE GALLETAS Y LIMON)

- -Squeeze Lemon and strain to remove pulp and seeds -Blend lechera, evaporated milk and lemon juice in a blender until smooth, about 1 minute -in an 8x8 pan or casserole, layer lemon mixture and cookies until all cookies have been used. Make sure that first and last layer are lemon mixture. -cover with foil or plastic wrap and freeze 2-3 hours until firm in the center -serve alone or with strawberry or raspberry sauce Can be made 1 day ahead of time and frozen overnight.
TASTES LIKE A PAY DAY CANDY BAR
So simple. My sister-in-law had this mixed up at Christmas and we were so suprised at how it did taste just like the candy bar!

- 1. pour jar of peanuts into bowl mix in the candy corn use less of this than you have peanuts. After eating some of this by all lol, we just keep the rest in the peanut jar that way it is sealed and fresh.

- 2. IN LG. BOWL, BEAT CREAM CHEESE, BUTTER & SUGAR. IN ANOTHER BOWL, WHISK MILK & PUDDING TOGETHER FOR 2 MINS OR UNTIL THICKENED. ADD TO CREAM CHEESE MIXTURE.
- 3. FOLD IN COOL WHIP. PLACE 1/2 OF CRUMBS IN TALL BOWL, TOP WITH 1/2 PUDDING MIX. REPEAT LAYERS. SPRINKLE WITH RESERVED CRUMBS. REFRIGERATE UNTIL SERVING. 8-10 SERVINGS
