¼ cup bacon drippings
¼ cup all-purpose flour
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
4 cups milk, divided

Steps:

  • Heat bacon drippings in a skillet over medium heat; whisk flour into drippings until smooth. Reduce heat to low and cook the flour mixture until it turns a caramel brown color, stirring constantly, about 15 minutes. Be careful, the roux burns easily. Stir in salt and black pepper.
  • Whisk 1/2 cup milk into the roux until thoroughly blended. Continue whisking milk into the gravy, 1/2 cup at a time, whisking in each amount of milk completely before adding more. Bring gravy to a simmer and whisk constantly until thick, smooth, and bubbling.

My Pawpaw used to make this gravy along with bacon (the source of the drippings), fried eggs and a 5 count can of biscuits and Coffee perculating on the stove.He claimed the coffee didn't taste right in them electric things! The aroma of coffee and bacon always woke me up!

3 Tbsp bacon drippings
5 Tbsp flour, packed
1 1/2 c water
alittle salt
black pepper

Steps:

  • 1. In 6-8 in. skillet add drippings, flour, salt and pepper and whisk together. Heat on med. high heat stirring constantly untill it turns a med. to dark brown in color. Quickly add water, stirring constantly. Bring back up to boil, adjust salt and pepper to taste. Reduce to low and cook 1-2 minutes
  • 2. If gravy is alittle thick just add alittle more water. Must be served right away as it skims easily.
  • 3. If you don't save bacon drippings like us southern cooks just fry 4-5 pieces of bacon, thick sliced.

6 slices bacon
2 tablespoons bacon grease
2 tablespoons flour
2 cups milk
salt and pepper

Steps:

  • Preheat a large skillet to medium-hi. Place 6 slices of bacon in the skillet and cook until just under crispy.
  • Remove bacon from skillet and drain; set aside. Discard all but 2 tablespoons of the bacon grease.
  • Add flour to grease, and whisk together. Cook for about a minute without burning the flour.
  • Add milk; whisk together.
