1/4 cup optional raisins
1/2 cup chocolate chips
1/2 cup multi-colored chocolate candies
1 stick softened butter
1 (12 oz) jar creamy peanut butter
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1 cup granulated sugar
1 1/4 cups packed light brown sugar
3 eggs
2 teaspoons baking soda
4 1/2 cups not instant quick-cooking oatmeal

Steps:

  • Preheat the oven to 350 °F. Line cookie sheets with parchment paper or nonstick baking mats.
  • In a very large mixing bowl, combine the eggs and sugars. Mix well. Add the salt, vanilla, peanut butter and butter. Mix well. Stir in the chocolate candies, chocolate chips, raisins (if using), baking soda and oatmeal. Drop by tablespoons 2 inches apart onto the prepared cookie sheets.
  • Bake for 8-10 minutes. Do not overbake. Let stand for about 3 minutes before transferring to wire racks to cool. When cool, store in large resealable plastic bags. Makes about 3 dozen cookies.

1 1/4 cups brown sugar
1 cup sugar
1/2 teaspoon salt
1/2 teaspoon vanilla
1 (12 ounce) jar peanut butter
1/2 cup butter, softened
1/2 cup candy covered plain chocolate candies (such as M & M's)
1/2 cup chocolate chips
1/4 cup raisins (optional)
1/4 cup nuts, chopped (any kind) (optional)
2 teaspoons baking soda
4 1/2 cups oats (the quick cooking kind)

Steps:

  • Pre heat oven to 350 degrees.
  • Spray a cookie sheet with non stick spray.
  • In a large bowl combine eggs and sugars; mix well.
  • Add salt, vanilla, peanutbutter, and butter (sometimes I don't use all the butter it calls for and it still turns out fine!). Mix well.
  • Stir in M & M's, chocolate chips, and raisins and nuts (if using), baking soda and oatmeal.
  • Drop by tablespoonfuls, 2 inches apart on prepared cookie sheet.
  • Bake for 8-10 minutes. Do not overbake.

8 oz. chocolate chips, 1 1/3 cup
1/2 cup raisins, optional
4 tsp. baking powder
9 cups quick oats, about 30 ounces

Steps:

  • Preheat oven to 350. Line baking sheets with parchment paper. In very large bowl on medium-high speed, beat together the brown and white sugars and eggs. Add salt, vanilla, peanut butter and butter, beat well. Stir in the M&M's, chocolate chips, raisins (if using), baking soda and quick oats. Drop by tablespoonfuls 2" apart onto baking sheets. Bake for 8-10 minutes. Let stand 3 minutes. Transfer to racks, cool.
