PAULA DEEN'S PEANUT BUTTER BARS
This recipe I found on page 150 of paula's cook book entitled "Lady and Sons Savannah Country Cookbook" Then I added a frosting of my own. - 1. For the bars: Preheat oven to 350 Degrees, Grease and flour a 9x13 pan (I only had a 9x11 so I used that). Melt butter and peanut butter together over hot water. (I put it in a pan and on simmer it was fast and easy)
- 2. Pour into remaining ingredients and stir well. Pour into greased and floured pan and bake 25-30 minutes. (I did 35 as mine was in a smaller pan.) Cook and cut into squares.
- 3. NOTE: Besides the things I stated above at the 30 minute mark I took them out of the oven and topped with the frosting and returned it to the oven 5-10 minutes more. For the frosting just mix all together adding enough water to make a regular icing and frost the hot bars. The frosting will be thin and melty at this point. Return to oven 5-10 minutes until it bubbles or looks really hot and remove and cool. cut and serve

This is another great recipe from Paula Deen's magazine,Holiday Baking 2010.Easy to make and very easy to eat :) I omitted the peanuts and toffee bits,didn't have any on hand.I also used creamy peanut butter.

- Preheat oven to 350.
- Line a 13x9 pan with foil.
- Spray with cooking spray.
- In large bowl,combine oats,flour,brown sugar,peanuts and baking soda.
- Using a pastry blender,cut in butter until mixture is crumbly.
- Press half of the oat mixture firmly into bottom of prepared pan.
- Bake for 20 minutes.
- In a medium bowl,beat cream cheese,peanut butter,sugar and egg at medium speed with a mixer until combined.
- Spoon mixture over prepared crust,spreading to edges.
- Sprinkle evenly with toffee bits.
- Cover evenly with remaining half of oat mixture.
- Bake for 20-25 minutes or until golden brown.
- Let cool before serving.

- Line an ungreased 13"x9" baking pan with 1 layer of crackers; cutting to fit if neccessary; set aside.
- In a large saucepan, melt butter over medium heat. Add cracker crumbs, brown sugar, milk and sugar. Bring to a boil and boil for 5 minutes, stirring constantly. Remove from heat, and pour half of the butter mixture evenly over crackers. Place another layer of crackers evenly over butter mixture; cutting to fit if necessary. Pour remaining butter mixture evenly over crackers. Top evenly with remaining crackers.
- In a small saucepan combine peanut butter, chocolate morsels and butterscotch morsels. Melt over medium low heat, stirring constantly. Spread evenly over top of crackers. Cover and chill for at least 1 hour. Cut into bars and store in refrigerator.
