2 pounds new potatoes
Kosher salt
3 tablespoons white wine vinegar
2 tablespoons whole-grain mustard
2 cloves garlic, finely chopped
Freshly ground black pepper
1/2 cup extra-virgin olive oil
Canola oil, for tossing
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Put the potatoes in a pot of generously salted water and bring to a boil. Cook until just tender, 8 to 10 minutes. Drain and cool slightly.

1 Tbsp butter
1 small onion chopped
1 Tbsp each flour and prepared mustard
1/2 c chicken stock
salt and pepper
1 lb potatoes peeled and small cubed.
1/4 c each panko bread crumbs and fresh grated parmesan cheese
parsley for garnish

  • 1. Peel and cube the potatoes. Cook in boiling salted water. Cook until softened but firm. Drain While potatoes are cooking make the sauce.
  • 2. Add butter to a saucepan and add the onions cook until translucent. Mix in the flour then slowly add the chicken stock. Bring to a boil once thickened turn to low and stir in the mustard. Taste and season with salt and pepper. Remove from heat.
