3/4 lb cooked ham, cubed
8 large boneless chicken breasts

Steps:

  • Preheat oven to 350.
  • Butter a medium roasting pan.
  • Combine the ham and cheese in a food processor and process, using the steel knife, until mixture is smooth, like a pate.
  • Divide into 8 equal portions, each the size of an Italian sausage to match the length of the chicken breast, crosswise.
  • Put 1 ham and cheese roll onto the center of a whole chicken breast.
  • Wrap each side of the breast around the roll and place in a buttered roasting pan, seam side down.
  • Assemble all the breasts the same way.
  • Place the stuffed breasts side by side, so that they fit snugly together.
  • Season with salt, pepper and paprika.
  • Bake for about 45 minutes until golden brown on top.
  • Remove from the oven and cool completely.
  • Drain and discard fat and juices.
  • Cover pan and refrigerate overnight.

1 teaspoon salt
1 pinch ground white pepper
½ teaspoon sweet paprika
1 (2.5 pound) whole chicken
1 ½ cups sliced fresh mushrooms
8 ounces duck liver pate
⅓ cup chopped pistachio nuts
½ teaspoon dried thyme leaves
1 egg
3 tablespoons dry bread crumbs
3 tablespoons melted butter

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Mix the salt, white pepper, and paprika together in a small bowl; set aside.
  • Rinse the chicken well with cold water, then pat dry inside and out with paper towels. Place the chicken into a small roasting pan, and sprinkle half of the paprika mixture inside the chicken. Rub the remaining mixture into the skin of the chicken, then set aside.

1/4 cup fresh lemon juice
1/4 cup olive oil
3 garlic cloves, minced, mashed to a paste with the back of a knife
3 tablespoons chopped fresh thyme leaves plus sprigs for stuffing

1 tablespoon chopped fresh sage
2 2 1/2-3-pounds whole chickens
2 tablespoons kosher salt

1 lemon, halved
Peppers and corn:
1/4 cup olive oil
1/2 cup minced red onion
1/4 cup minced capers plus 1-2 teaspoon caper brine
1 teaspoon crushed red pepper flakes

1/4 teaspoon salt
1/4 teaspoon pepper
2 cups pistachios, finely chopped

3/4 cup all-purpose flour
3 large eggs, beaten
1/3 cup butter, cubed
SAUCE:
2 tablespoons all-purpose flour
1-1/2 cups white wine or chicken broth
1-1/2 cups heavy whipping cream
2 tablespoons minced fresh tarragon or 2 teaspoons dried tarragon
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Flatten chicken breasts to 1/2-in. thickness. Sprinkle with salt and pepper., In a shallow bowl, combine pistachios and tarragon. Place flour and eggs in separate bowls.
