CHICKEN WILD RICE SOUP FROM THE PASTOR'S WIFE
My old pastor's wife used to make this. She was an incredible cook! I will use any recipe of hers--no questions asked! If I don't have dry sherry, I will use orange juice. Sometimes I will add more wild rice and just throw in a little more water as the rice cooks.

Tips:
- Use fresh pineapple: Fresh pineapple has a brighter flavor and a more tender texture than canned pineapple. If you're using canned pineapple, be sure to drain it well and rinse it before using.
- Don't overcook the pineapple: Overcooked pineapple will become mushy and lose its flavor. Cook it just until it's tender-crisp.
- Use a variety of cheeses: A combination of cheeses will give your scalloped pineapple a more complex flavor. Try using a sharp cheddar cheese, a mild Monterey Jack cheese, and a creamy Parmesan cheese.
- Add some spices: A little bit of spice will help to balance out the sweetness of the pineapple. Try adding a pinch of cayenne pepper, paprika, or nutmeg.
- Serve immediately: Scalloped pineapple is best served immediately after it's made. The leftovers can be stored in the refrigerator for up to 3 days.
Conclusion:
Scalloped pineapple is a classic Southern dish that's perfect for any occasion. It's easy to make and always a crowd-pleaser. With its sweet and tangy flavor, creamy cheese sauce, and golden brown crust, scalloped pineapple is sure to be a hit at your next potluck or family gathering.
