1¾ cups of flour + 2 tablespoons flour (divided)
5 eggs
1 can (14 oz sweetened condensed milk)
1/2 cup evaporated milk
1 tbsp vanilla
6 cups of corn (or 8 ears of corn, kernels removed)
2 tablespoons baking powder
pinch of salt
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees F.
  • Butter the pan.

½ cup crumbled cotija cheese

1 lime, zested
fresh lime juice, squeezed
1 can corn kernel, drained
½ cup crema Mexicana
1 cup masa harina, (preferably amarillo or yellow)
1 tablespoon baking powder
2 teaspoons kosher salt
1 stick unsalted butter, room temperature
3 large eggs, yolks and egg whites separated
¼ cup granulated sugar
½ cup pepitas, toasted

Steps:

  • Make the charred poblano butter: Preheat the oven to 450˚F (230˚C). Line a baking sheet with parchment paper or aluminum foil.
