Tips:

  • Use fresh corn: Fresh corn on the cob will give your pie the best flavor. If you don't have access to fresh corn, you can use frozen or canned corn, but the flavor will not be as good.
  • Don't overcook the corn: Overcooked corn will be tough and chewy. Cook the corn just until it is tender, about 5 minutes.
  • Use a good quality cheese: The cheese is one of the main ingredients in this pie, so it's important to use a good quality cheese. Use a cheese that melts well, such as cheddar, Monterey Jack, or queso Oaxaca.
  • Don't overmix the batter: Overmixing the batter will make the pie tough. Mix the batter just until the ingredients are combined.
  • Bake the pie until it is golden brown: The pie is done baking when the crust is golden brown and the filling is set. This will take about 30-35 minutes.

Conclusion:

Pastel de Elote (Corn Pie) is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up fresh corn, and it is sure to be a hit with your family and friends. With its creamy, cheesy filling and crispy crust, this pie is a true crowd-pleaser. So next time you're looking for a delicious and easy recipe, give Pastel de Elote a try!
