CREAMY PASTA WITH ROASTED ZUCCHINI, ALMONDS AND BASIL

Creamy Pasta With Roasted Zucchini, Almonds and Basil image

Whole-grain pasta offerings on supermarket shelves have expanded with gusto. Unlike the gluey, good-for-you-but-not-your-tastebuds pastas of yore, the best whole-grain brands are firm-textured and tasty. The warm, nutty flavor of varieties like these is robust enough to stand up to intense, complicated sauces, yet satisfying with just a little butter and Parmesan shaved over the top. Here, pasta with creamy goat cheese and a bite of citrus is enough to keep even the most staunch of whole-wheat opponents satisfied.

MIDNIGHT PASTA WITH ROASTED GARLIC, OLIVE OIL AND CHILE

Midnight Pasta With Roasted Garlic, Olive Oil and Chile image

This recipe is a version of aglio e olio pasta, which is often known as midnight pasta because it can be made quickly with a few pantry staples: garlic, olive oil, red-pepper flakes and pasta. This recipe takes a bit more time because it calls for roasting the garlic first, but doing so adds a complex, mellow flavor to the entire dish. If you're a planner, you could even roast a couple of heads of garlic in advance. (Roasted garlic will keep in an airtight container in the refrigerator for up to two weeks and in the freezer for up to two months.) Add whatever vegetables or proteins look good to you.

Provided by Ali Slagle

Categories     dinner, pastas, main course

Time 1h

Yield 4 servings

Number Of Ingredients 8

1 large head of garlic
Kosher salt
1/2 cup plus 1 teaspoon extra-virgin olive oil
1 cup firmly packed parsley leaves
1 pound spaghetti or other long pasta
1/2 teaspoon red-pepper flakes, plus more for garnish
Black pepper
Freshly grated Parmesan, for serving

Steps:

  • Heat the oven to 400 degrees. Cut off the top 1/4 inch of the head of garlic to expose the top of the cloves, then place on a piece of foil, cut-side up. Sprinkle exposed cloves with salt, then drizzle with 1 teaspoon oil. Wrap the garlic in the foil and roast until soft and golden brown, 40 to 50 minutes.
  • When you're ready to make the pasta, bring a large pot of salted water to a boil. Finely chop the parsley leaves. Add pasta to the boiling water and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta.
  • While the pasta cooks, in a large Dutch oven or skillet, heat the remaining 1/2 cup oil over medium heat. Squeeze the roasted garlic cloves into the oil and cook, breaking them up with your spoon, until very fragrant, 2 to 3 minutes. Add the red-pepper flakes and a few generous grinds of pepper. Remove the pan from the heat to infuse the oil while the pasta finishes cooking.
  • When the pasta's done, heat the garlic oil over medium, then add the cooked pasta, 1/2 cup reserved pasta water and the parsley, and simmer, tossing constantly and adding more pasta water as needed, until the pasta is glossed with sauce.
  • Serve with more red-pepper flakes, black pepper and Parmesan.

Yield 4 serving(s)

Number Of Ingredients 6

1 lb rotini pasta, twist or spirls, uncooked

1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary, crushed
2 tablespoons canola oil
3 medium zucchini, coarsely grated (about 5-6 cups)

  • Lay a 12-inch square piece of foil on the counter and put the garlic on it.
  • Sprinkle the thyme and rosemary over the garlic.
  • pour the oil over the garlic and herbs.
  • Draw up the edges of the foil and make a sealed packet; bake 20 minutes.
  • While the garlic is baking, Cook Pasta according to package directions.
  • Two minutes before Pasta is done ADD the Zucchini to the cooking pasta, Cook 2 minutes.
  • Drain Zucchini and Pasta.
  • Open the foil and MASH the garlic lightly with a spoon.
  • Toss mashed garlic with the pasta and zucchini.
  • Season with salt and pepper and serve.

Tips:

  • Choose fresh, firm zucchini: Look for zucchini that is deep green in color and free of blemishes. The zucchini should also be firm to the touch.
  • Roast the garlic: Roasting the garlic mellows its flavor and makes it sweeter. To roast the garlic, simply wrap the garlic cloves in foil and bake them at 400 degrees Fahrenheit for 30 minutes.
  • Use a good quality olive oil: Olive oil is a key ingredient in this dish, so it's important to use a good quality oil. Extra virgin olive oil is the best choice, as it has a rich, fruity flavor.
  • Cook the pasta al dente: Al dente means "to the tooth" in Italian, and it refers to the ideal texture for cooked pasta. Pasta that is cooked al dente is slightly firm to the bite.
  • Add the zucchini and garlic to the pasta at the end of cooking: This will help to prevent the zucchini from overcooking and becoming mushy.
  • Season the dish with salt and pepper to taste: Salt and pepper are the essential seasonings for this dish. Be sure to taste the dish before serving and adjust the seasonings as needed.

Conclusion:

This pasta with zucchini and roasted garlic is a simple but delicious dish that is perfect for a weeknight meal. The roasted garlic adds a subtle sweetness to the dish, while the zucchini provides a fresh, crisp texture. This dish is also a good source of vitamins and minerals, making it a healthy choice for your family.
