  • If you are re-constituting dried mushrooms, add the fresh mushrooms to them for about 1 minute to allow them to absorb some of the wild mushroom flavor.
  • In a large saute pan, heat the oil over medium-high heat.
  • Add the mushrooms and cook, stirring, until soft, 3 to 4 minutes.
  • Add the shallots, garlic, thyme, salt, and pepper, and cook, stirring, until fragrant, about 2 minutes.

  • Increase the heat to high, and bring to a boil.
  • Reduce the heat and simmer until the sauce thickens enough to coat the back of a spoon, about 5 minutes.
  • Add the Parmesan and adjust the seasoning, to taste.
  • Add the pasta, stir to coat with the sauce, and cook until the pasta is heated through, 1 minute.
  • Remove from the heat and divide equaly among serving bowls or plates.
  • Sprinkle each serving with chives and serve immediately.

Tips:

  • Use high-quality mushrooms. Wild mushrooms have a more intense flavor than cultivated mushrooms, so they're worth the extra cost. If you can't find wild mushrooms, you can use a mix of cremini and shiitake mushrooms.
  • Clean the mushrooms thoroughly. Wild mushrooms can be dirty, so it's important to clean them thoroughly before cooking. Use a soft brush to remove any dirt or debris, then rinse the mushrooms under cold water.
  • Sauté the mushrooms until they are browned. This will help to develop their flavor and release their juices.
  • Use a good quality white wine. The wine will help to deglaze the pan and add flavor to the sauce.
  • Add some cream or milk to the sauce. This will help to make the sauce more creamy and rich.
  • Season the sauce to taste. Add salt, pepper, and any other spices that you like.
  • Serve the pasta with a sprinkle of parmesan cheese. This will add a touch of extra flavor and richness.

Conclusion:

This pasta with wild mushroom sauce is a delicious and easy-to-make dish that is perfect for a special occasion. The combination of wild mushrooms, white wine, and cream creates a rich and flavorful sauce that is sure to please everyone at the table.
