The addition of a creamy mozzarella sauce elevates the dish, enveloping the pasta in a blanket of rich, velvety goodness. Our second recipe introduces a burst of fresh flavors with sun-dried tomatoes and spinach. The sun-dried tomatoes impart a tangy sweetness, while the spinach adds a vibrant green hue and a boost of nutrients to the dish. A sprinkling of Parmesan cheese adds the perfect finishing touch. Last but not least, our third recipe takes a bold and spicy turn with the addition of zesty chorizo sausage. The chorizo sausage infuses the pasta with a smoky, slightly spicy kick, which is beautifully balanced by the sweetness of the tomatoes and the melted mozzarella cheese. PASTA WITH TURKEY SAUSAGE, TOMATOES & MOZZARELLA
My mother gave this to me when I got married, because it was one of my favorite dinners that she had made. I like to make it with hot sausage, but regular sausage is fine too. I don't know how big of a package of sausage to use-- she left that part out. I just buy a 1 lb. pkg.

Steps:
- Heat the oil reserved from the tomatoes in a heavy large frying pan over medium-high heat. Add the sausages and cook until brown, breaking up the meat into bite-size pieces with a fork, about 8 minutes. Transfer the sausage to a bowl. Add the artichokes and garlic to the same skillet, and saute over medium heat until the garlic is tender, about 2 minutes. Add the broth, wine, and sun-dried tomatoes. Boil over medium-high heat until the sauce reduces slightly, stirring occasionally, about 8 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Cook the fusilli in boiling water until tender but still firm to the bite, stirring often, about 8 minutes. Drain the pasta (do not rinse). Add the pasta, sausage, 1/2 cup Parmesan, basil, and parsley to the artichoke mixture. Toss until the sauce is almost absorbed by the pasta. Stir in the mozzarella. Season, to taste, with salt and pepper. Serve, passing the additional Parmesan cheese alongside.
CHEESY BAKED PASTA WITH SAUSAGE AND RICOTTA
Like a cross between baked ziti and sausage lasagna, this mozzarella-topped pasta is rich with ricotta and crushed tomatoes - and cooks entirely in one pan, including the pasta. The Italian sausage adds meaty depth to the sauce, but vegetarians can leave it out or use their favorite plant-based sausage instead.

Steps:
- Heat oven to 425 degrees. Heat oil in a 12-inch ovenproof skillet over medium-high. Crumble sausage into skillet, using a spoon to break it into small pieces. Cook until starting to brown, stirring occasionally, 5 to 7 minutes. Stir in garlic, oregano, fennel seeds and red-pepper flakes (if using), and cook another 1 to 2 minutes.
- Stir in whole tomatoes and their juice, using a spoon to break them up. Add crushed tomatoes, bay leaves and 2 teaspoons salt, and bring to a simmer. Simmer for 10 minutes to thicken slightly.
- Stir in pasta and 1 cup water and return to a simmer. Continue to simmer for 2 minutes, stirring frequently to make sure pasta doesn't stick to the bottom of the pan. Remove from heat, pluck out the bay leaves, and fold in about a third of the mozzarella.
- Top pasta with remaining mozzarella and dollops of ricotta. Sprinkle with Parmesan, then transfer to oven. Bake until pasta is tender when poked with a fork, and cheese is bubbly and lightly golden, 18 to 22 minutes. (If you'd like a more deeply browned topping, run the pan under the broiler for 1 or 2 minutes.) Remove from oven and let cool slightly before serving. Top with basil, plenty of black pepper, and more red-pepper flakes, if you like.
BOW TIES WITH SAUSAGE, TOMATOES AND CREAM
A friend gave this recipe to me a few years back, and my family can't seem to get enough of it. It sounds strange with cream in it, but that just enhances the flavor and texture. This is a very easy recipe.

Tips:
- Choose the right pasta. Short, sturdy pasta shapes like penne, rigatoni, and fusilli are best for holding the sauce and vegetables.
- Use a good quality turkey sausage. Look for a brand that is made with all-natural ingredients and has a good flavor.
- Cook the turkey sausage until it is browned. This will help to develop its flavor and prevent it from becoming dry.
- Use a variety of vegetables. This will add color, flavor, and nutrients to the dish.
- Don't overcook the pasta. Al dente pasta is the best choice for this dish.
- Use a flavorful sauce. A simple tomato sauce made with fresh tomatoes, garlic, and basil is a great option.
- Top the pasta with mozzarella cheese. This will add a gooey, melted texture to the dish.
- Serve the pasta immediately. This is the best way to enjoy its fresh flavor and texture.
