  • - In large skillet, saute onion, garlic, spinach and parsley in oil - Add rosemary, oregano, salt, pepper and white wine, simmer 2-3 minutes - Cook pasta, drain and return to pot - Stir blue cheese into the sauce and gently heat through - Toss the pasta with sauce and serve immediately

400 g lasagna pasta or 400 g similar pasta
5 tablespoons olive oil
1 shallot
2 cloves garlic
400 g deep freeze spinach, defrosted
100 ml cream
black pepper
8 pitted black olives
175 g blue cheese

Steps:

  • Chop the shallots, garlic and olives.
  • Cook the pasta.
  • While heating water for the pasta, heat 3 tbsp of oil in a skillet and sauté the shallots and garlic circa 3 mins.
  • Add the spinach and heat it slowly.
  • Add the cream.
  • Add salt and pepper to taste.
  • Drain the pasta thoroughly and add pasta and olives to spinach mixture.
  • Crumble the cheese over the pasta; stir.

12 ounces penne
200 g frozen spinach
85 g blue cheese, of choice (I use Blaukrantz a local blue cheese in S. Africa)
250 g mascarpone cheese
25 g freshly grated parmesan cheese
1 pinch chili flakes (optional)
freshly ground salt and black pepper, for seasoning

Steps:

  • Bring a large pan of salted water to the boil.
  • Add pasta and cook for 10-12 minutes, adding the spinach to the pan for the last 3 minutes of cooking time.
  • Drain well then tip the pasta and spinach into a shallow baking dish along with the crumbled blue cheese,pinch of chili flakes if using and seasoning to taste.
  • Put spoonfuls of the mascarpone cheese all over the top of the pasta.
  • Sprinkle with the parmesan then grill for 5 minutes until the mascarpone melts and the top turns a golden brown.

25g butter
1 onion , thinly sliced
1 garlic clove , crushed
1 tbsp fresh chopped sage , or 1 tsp dried
100g stilton , cubed
handful toasted walnuts , chopped

  • Boil the pasta according to pack instructions. In a saucepan, melt the butter, then gently fry the onion until golden. Add the garlic and sage, fry for a further 2 mins, then remove the pan from the heat. Drain the pasta and reserve some cooking water. Stir through the buttery onions, stilton and 2 tbsp cooking water, then sprinkle with the toasted walnuts to serve.
