1 small onion, chopped
1/4 lb smoked salmon, chopped
1 cup heavy cream
3 tablespoons capers, drained

1 lb pasta, cooked al dente,drained and tossed with (reserve about 1/4 cup of cooking water)

  • In a large skillet, heat the olive oil over medium-high heat.

1 yellow peppers, diced
1/2 cup white wine
2 cups bechamel, recipe follows
1 cup cream
8 ounces brined smoked salmon
4 tablespoons capers, plus 2 tablespoons, fried for garnish

1 1/2 limes, juiced
1 tablespoon fresh chopped dill
Serving suggestions: over cooked pasta

25g fresh white breadcrumb
500g spaghetti
2 garlic cloves
2 tiny dried bird's eye chillies , finely crumbled, or a quarter tsp crushed chillies
finely grated zest 1 lemon
4 tbsp caper in brine, drained
85g rocket leaves
200g hot-smoked salmon , flaked
sliced tomatoes , to serve

Steps:

  • Heat 2 tbsp of the oil in a small frying pan until hot. Add the breadcrumbs and cook over a medium heat for 3-4 minutes until golden and crisp, turning often. Tip into a small bowl. (You can prepare these several hours ahead.)
  • Cook the pasta in plenty of gently boiling well-salted water until al dente. Meanwhile peel the garlic and chop it very finely. Put the rest of the oil in a small pan and add the garlic and chillies. Warm gently over a low heat so they flavour the oil - but don't let the garlic fry.
  • Drain the pasta and tip it into a warmed very large serving bowl. Quickly add the lemon zest and capers to the oil, then pour over the pasta. Toss well, add the rocket and salmon and toss again - take care not to break up the salmon too much. Scatter the breadcrumbs over and serve with a salad of sliced tomatoes.

This is an awesome pasta that is quick to make and very satisfying. I first copied a recipe from Bon Appetit and then combined it with several recipes from my cookbooks. Over the years I have tweeked it to the recipe it is today. I have used fresh salmon in place of smoked salmon when I have not been able to get smoked salmon, and it was very good as well. Served with a salad it makes a very lovely meal.

1/4 cup olive oil
1 cup mushroom, sliced
2 shallots, sliced thinly
1 garlic clove, minced
1 pinch cayenne
1/3 lb smoked salmon, cut into 2-inch pieces
1/4 cup white wine
1 cup heavy cream
2 tablespoons lemon juice
1 tablespoon lemon zest, grated
3 tablespoons capers, drained
1 teaspoon parsley
1 lb linguine or 1 lb spaghetti
1/2 cup parmesan cheese, freshly grated
salt and pepper

  • Cook Pasta as directed. Drain.
