4 cups chopped butternut squash
1 tablespoon olive oil
6 tablespoons unsalted butter, divided
¼ cup fresh sage leaves, chopped
3 tablespoons fresh lemon juice
1 cup grated Parmesan cheese
½ teaspoon kosher salt
½ teaspoon black pepper

Steps:

  • Cook pasta according to package directions; drain.
  • Preheat oven to 450 degrees F. Place sausage and squash on a large baking pan. Drizzle with oil; toss to coat.
  • Roast in preheated oven for 12 minutes. Toss with 3 tablespoons cubed butter and sage; return to oven for 12-14 minutes, until squash is caramelized and tender.

1 tablespoon olive oil
salt and pepper
1 tablespoon olive oil
1/2 lb sausage (, crumbled, without casings)
1 tablespoon olive oil
4 garlic cloves (minced)
6 oz spinach
1 cup heavy cream
1/3 cup Parmesan cheese (shredded)
1/4 teaspoon salt
8 oz farfalle ((bow tie pasta))

Steps:

  • Preheat oven to 400 F.
  • In a large bowl, toss cubed butternut squash with olive oil, salt, and pepper.
  • Spread the squash on a parchment paper-lined baking sheet in one layer, without overcrowding.
  • Roast in the preheated oven at 400 F for 30 minutes. Remove from oven.
  • In a medium skillet, heat 1 tablespoon of olive oil on medium heat.
  • Add crumbled sausage and cook for about 10 minutes, regularly stirring, until the sausage is cooked through. Remove from heat and set aside.

  • Cook pasta al dente in boiling water according to package instructions. That usually means cooking pasta in boiling water for about 7 to 11 minutes. Drain.
  • To a large skillet with the creamy spinach sauce, add drained cooked pasta and cooked sausage. Stir. Season with salt and pepper, if desired.
  • Top the pasta with roasted butternut squash. Stir the squash in, or leave it on top.

1 pound Italian hot sausage
1 cup chopped onion
5 garlic cloves, thickly sliced
1 tablespoon chopped basil
1 tablespoon chopped fresh sage
¼ teaspoon red pepper flakes (optional)
1 cup white wine
1½ cups butternut squash, peeled, seeded and cut into ½-inch dice
2½ cups chicken stock
2 tablespoons salt (optional)
1 pound DaVinci® pasta: sea shells, penne rigate or rigatoni
6 tablespoons Parmesan cheese (optional)
2 tablespoons softened butter

Steps:

  • Pour 1 tablespoon of olive oil into a large skillet (12 inches), and cook over high heat for 2 minutes. Take the sausage out of the casing and add it to the hot oil. Cook for about 3 minutes until it browns. Using the back of a wooden spoon, break the sausage up into small, bite-size pieces while it is browning. Turn off the heat. Using a slotted spoon, place the sausage in a bowl; cover and set aside. Keep about 1 tablespoon of the oil and fat left in the pan, and discard the rest. Add the remaining 2 tablespoons of olive oil to the pan, and cook over medium heat for 3 minutes. Add the onion, garlic, basil and sage, and cook for 4 minutes, stirring well, until the onion and garlic start to brown. (If you like it really spicy, add the optional ¼ teaspoon of red pepper flakes.) Add the reserved sausage and cook for 2 more minutes, stirring well. Add the wine and deglaze the pan. 12 oz. Italian sausage (about 3 links), casings removed
1 Tbsp. all-purpose flour
2 cups milk
1 cup heavy cream
1 1/2 cups finely grated Parmesan, divided
1/2 large butternut squash (about 1 lb.), peeled, seeded, chopped into 1/2" pieces
1/2 lb. fusilli
1 garlic clove, finely grated
1 sprig sage
2 1/2 tsp. kosher salt

Steps:

  • Heat oil in a medium heavy pot over medium-high. Cook sausage, breaking up into about 1" pieces with a wooden spoon, until well browned, 5-7 minutes. Add flour and cook, stirring constantly, until evenly distributed, about 1 minute.
  • Combine milk, cream, and 2 cups water in a large bowl or glass measuring cup. Stirring sausage mixture constantly, slowly stream in milk mixture; bring to a simmer. 1 pound hot Italian sausage links
2 tablespoons extra-virgin olive oil, plus more for the pasta

Steps:

  • Bring a large pot of heavily salted water to a boil. Meanwhile, cook the sausage: In a sauté pan or skillet large enough to hold all the pasta, add the sausage and enough cold water to cover. Set over medium-high heat, then remove from the heat when the water hits a boil, about 8 to 10 minutes.
  • Transfer the sausage to a cutting board and cut into 1/2-inch coins. Dry out the pan and return it to the stove.
