Time 50m

Number Of Ingredients 18

1 lb spaghetti or your favorite pasta
10 chicken bouillon cubes
1 can(s) artichoke hearts, drained and quartered
3 large boneless skinless chicken breasts, cooked and diced
1/2 lb fresh mushrooms, sliced
2 Tbsp butter
3 Tbsp olive oil, extra virgin
1/2 c flour
1 1/2 c milk
4 c chicken broth
3 Tbsp sherry (cooking sherry ok)
1/2 small onion, chopped fine, or 1 tbsp minced dried
1 Tbsp granulated onion
1 Tbsp granulated garlic
4 green onions, sliced thin
salt & white pepper to taste
1/2 c 6 cheese italian blend, grated
2 Tbsp fresh parsley, chopped

Steps:

  • 1. Dissolve bouillon cubes in boiling water. Cook spaghetti according to directions and drain. Set aside.
  • 2. In deep skillet, heat olive oil and butter over high heat. Sear chicken tenders until golden brown, about 5-7 minutes per side.
  • 3. Remove chicken to a plate and set aside. When cool tear chicken into bite size pieces and set aside.
  • 4. Over medium heat add flour to pan drippings and make a blonde roux. Cook for about 5 minutes. If you're using fresh onion add that to roux and cook for another 3-4 minutes but don't brown the roux.
  • 5. While stirring constantly gradually add the chicken broth, making sure all lumps are removed. Add milk until gravy reaches a smooth, thin consistency.
  • 6. Reduce heat to low, add sherry, chicken, artichoke hearts, green onions, dried minced onion (if using), granulated onion & garlic, white pepper and mushrooms. Let simmer for about 20 minutes, stirring occasionally.
  • 7. If sauce starts to get too thick add a little more milk. Simmer another 5 minutes and add cheese and stir until completely melted.
  • 8. Taste for seasoning and add as needed. Ladle sauce over spaghetti and sprinkle with parsley. Serve along with garlic french bread. Enjoy!

PENNE WITH TOMATOES, ARTICHOKES AND MUSHROOMS

Penne With Tomatoes, Artichokes and Mushrooms image

Yep, this is one of those, gee, no idea what I'm making let me see what's in the pantry meals:-). I love the combination of mushrooms, artichokes and tomatoes plus the buttery taste of fresh rosemary. Make sure you use a high quality pasta to stand up to this assertive sauce. I love this with a side of steamed cauliflower with garlic breadcrumbs. You could also easily add chicken, sausage, or another protein instead of the chickpeas.

Provided by Aioli_Queen

Categories     Penne

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 14

1 lb cooked penne
2 tablespoons olive oil
1 medium vidalia onion, finely chopped
2 garlic cloves, minced
2 tablespoons fresh rosemary, chopped
1/2 teaspoon dried red pepper flakes
2 cups cremini mushrooms, sliced
1 cup canned chick-peas
1 (28 ounce) can plum tomatoes, broken up
1 (15 ounce) can diced tomatoes
1 (12 ounce) package frozen quartered artichoke hearts
1 1/2 teaspoons kosher salt
1 tablespoon brown sugar
1/3 cup grated pecorino romano cheese (optional)

Steps:

  • Cook the pasta while making the sauce.
  • Gently heat a large saute pan over medium heat for about 1 minute.
  • add 1 TB of the olive oil, the onion, the garlic, the rosemary and the red pepper flakes. Sautee until the onions are starting to soften, about 5 minutes.
  • Add the mushrooms and cook until the onions are starting to brown and the mushrooms have released their juices and have softened, about 8 minutes.
  • Add the chickpeas and break the plum tomatoes into pieces with your hands. Add them to the pan along with their juice and the diced tomatoes.
  • After the tomatoes have cooked for about 5 minutes add the artichoke hearts. Stir and cover until the artichokes are heated through and the tomatoes are just beginning to thicken.
  • Add the sugar and salt, stir and cook gently over medium-low heat for about 10 minutes stirring now and then.
  • Add the final TB of olive oil after you've turned off the heat and stir it inches.
  • Serve over Penne sprinkled with the Romano.

Tips:

  • Use fresh, high-quality ingredients: Fresh mushrooms and artichokes will make a big difference in the flavor of the dish. Look for mushrooms that are firm and have a deep, earthy color. Artichokes should be heavy for their size and have tightly closed leaves.
  • Clean and trim the mushrooms and artichokes properly: To clean the mushrooms, use a damp paper towel to wipe away any dirt or debris. Trim the stems and slice the mushrooms into thin slices. To clean the artichokes, trim the stems and remove the tough outer leaves. Cut the artichokes in half and scoop out the fuzzy choke from the center.
  • Cook the mushrooms and artichokes separately: This will help to ensure that both vegetables are cooked evenly. Cook the mushrooms in a hot skillet with a little olive oil until they are browned and tender. Cook the artichokes in a steamer or by boiling them in water until they are tender.
  • Use a flavorful broth: The broth that you use to make the sauce will greatly impact the flavor of the dish. Use a broth that is rich in flavor, such as chicken broth or vegetable broth. You can also add some white wine or lemon juice to the broth for extra flavor.
  • Don't overcook the pasta: Pasta should be cooked al dente, or slightly firm to the bite. Overcooked pasta will be mushy and unpleasant to eat.

Conclusion:

Pasta with mushrooms and artichokes is a delicious and versatile dish that can be served as a main course or a side dish. It is a great way to use up leftover vegetables and it is also a healthy and affordable meal. With a few simple ingredients and a little bit of time, you can easily make this tasty dish at home.
