12 ounces fettuccine
1 tablespoon butter
1 shallot, finely chopped (1/4 cup)
2/3 cup heavy cream
1 package (10 ounces) frozen peas, thawed
8 slices prosciutto (about 4 ounces total), halved lengthwise and thinly sliced crosswise, about 1 cup
1 tablespoon finely grated lemon zest
1 tablespoon fresh lemon juice
1/2 cup finely grated Parmesan cheese, plus more for serving (optional)

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Reserve 1 cup pasta water; drain pasta and return to pot.

3 large shallots, minced
3/4 cup low sodium chicken broth
1 cup whipping cream
2 teaspoons grated fresh lemon rind
1 teaspoon orange zest
1/4 teaspoon cayenne pepper
1 -2 cup frozen green pea, thawed
2 teaspoons thinly sliced fresh mint leaves
1 tablespoon fresh lemon juice (1 lemon)
1 lb penne pasta
1/2 lb prosciutto (12 thin slices)

Steps:

  • Melt butter.
  • Add shallots and sauté until translucent (about 2 min.).
  • Add broth.

12 ounces fettuccine
1 1/2 pounds asparagus, tough ends trimmed, cut into 1/2-inch pieces
1/4 cup grated parmesan cheese, plus more for topping

Steps:

  • Bring a large pot of salted water to a boil. Cook the prosciutto in a large skillet over medium-high heat until it renders some fat and begins to brown, about 2 minutes.
