Yield 6 servings

Number Of Ingredients 12

Kosher salt and freshly ground black pepper
1 pound vegetable penne pasta
4 boneless skinless chicken breasts
5 tablespoons olive oil
3 cloves garlic, finely chopped
1 large shallot, finely chopped
1/2 cup freshly squeezed lemon juice
1 1/2 cups trimmed and sliced sugar snap peas
One 10-ounce bag frozen peas
3 cups baby spinach
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh flat-leaf parsley, plus additional leaves for serving

Steps:

  • Bring a large pot of water to a boil and salt it generously. Add the pasta and cook until al dente, 8 to 10 minutes. Reserve 1/4 cup of the cooking liquid. Drain the pasta and set aside.

Tips:

  • Use fresh herbs: Fresh herbs add a vibrant flavor to this dish. If you can, use a variety of herbs, such as basil, parsley, oregano, and thyme.
  • Don't overcook the pasta: Pasta should be cooked al dente, or slightly firm to the bite. Overcooked pasta will be mushy.
  • Use a good quality olive oil: Olive oil is a key ingredient in this dish. Use a good quality extra virgin olive oil for the best flavor.
  • Add the lemon juice and zest at the end: Adding the lemon juice and zest at the end of cooking will help to preserve their flavor.
  • Serve immediately: This dish is best served immediately after it is made. The pasta will start to absorb the sauce and lose its flavor if it sits for too long.

Conclusion:

This pasta dish is a light and refreshing meal that is perfect for a summer day. It is also a great way to use up fresh herbs from your garden. With its simple ingredients and easy preparation, this dish is sure to become a favorite.
