Categories     World Cuisine Recipes     European     Italian

Time 1h10m

Yield 4

Number Of Ingredients 11

6 slices bacon, chopped
1 ½ pounds skinless, boneless chicken breast halves
salt and ground black pepper to taste
3 cloves garlic
1 teaspoon ground black pepper
½ cup white wine
1 ½ cups grated Parmesan cheese
3 large eggs
1 gallon water
1 pound spaghetti
2 cups frozen peas

Steps:

  • Cook the bacon in a large skillet over medium heat until crisp, about 10 minutes. Remove bacon from skillet with a slotted spoon and drain on a paper towel-lined plate. Drain fat from skillet, reserving 2 tablespoons of the bacon drippings.
  • Season chicken with salt and pepper. Heat 1 tablespoon bacon drippings in the skillet over medium heat. Cook chicken breast halves in the bacon drippings until no longer pink in the center and the juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer to cutting board and tent with foil. Rest chicken for 5 minutes before slicing; set aside.
  • Heat remaining tablespoon bacon drippings in skillet over medium heat until shimmering. Cook and stir garlic and ground black pepper in skillet until fragrant, about 30 seconds. Pour wine into skillet; cook at a simmer until thickened, about 2 minutes. Remove from heat.
  • Whisk Parmesan cheese and eggs together in a bowl. Slowly stream wine mixture into the Parmesan mixture while whisking continually.
  • Bring a large pot of generously salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Remove 1/2 cup of the water from the pot for later use.
  • Put the peas in a large colander. Drain the pasta in the colander with the peas. Return drained pasta and peas to the pot. Stir bacon, chicken, and wine mixture into the spaghetti. Thin sauce with reserved pasta water as desired.

CREAMY PASTA WITH SMOKED BACON AND PEAS

Creamy Pasta With Smoked Bacon and Peas image

This elegant riff on a childhood favorite came to The Times in 2009 by way of Jamie Oliver, the British chef and cookbook author. It was featured in his cookbook "Jamie's Food Revolution: Rediscover How to Cook Simple, Delicious, Affordable Meals," and it's a favorite of his daughters, Poppy and Daisy. It's wholesome (no powdered cheese!), and it can be ready in about 15 minutes.

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 11

Sea salt
10 slices smoked bacon or pancetta
1 pound dried mini-shell or other small pasta
2 tablespoons olive oil
1 tablespoon butter
Freshly ground black pepper
2 cups frozen peas
2 tablespoons crème fraîche or heavy cream
2 tablespoons finely chopped fresh mint leaves
Juice of 1 lemon
6 ounces finely grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted to a boil. Meanwhile, cut sliced bacon crosswise into thin slivers, or slice pancetta into julienne. Add pasta to boiling water and cook to taste.
  • While pasta is cooking, place a large skillet over medium heat, and add 2 tablespoons olive oil and the butter. Add bacon or pancetta and a sprinkling of pepper, and fry until golden and crisp. Immediately add frozen peas and stir for a minute or two. Add crème fraîche or heavy cream and chopped mint.
  • Reserve 1 cup of the pasta cooking water, and drain the pasta. Add pasta to the skillet and stir. Add lemon juice, and adjust salt and pepper to taste. Bring to a simmer, then remove from heat. The mixture should be thick; if desired, a splash of the pasta water may be added to the sauce to thin it slightly. Add Parmesan and stir to mix. If desired, serve with a green salad.

Tips and Conclusion

Tips:

  • Use high-quality ingredients. This will make a big difference in the flavor of your dish. Look for fresh, organic ingredients whenever possible.
  • Don't overcook the pasta. Pasta should be cooked al dente, which means it should be tender but still have a slight bite to it.
  • Season the pasta water. Adding salt to the pasta water will help to flavor the pasta. You can also add other seasonings, such as garlic powder or onion powder, to the water.
  • Don't overcrowd the pan. When cooking the chicken and bacon, don't overcrowd the pan. This will prevent the meat from cooking evenly.
  • Use a large skillet. When cooking the pasta, use a large skillet so that the pasta has plenty of room to cook.
  • Add the peas at the end. Peas cook quickly, so add them to the pasta dish at the end so that they don't overcook.

Conclusion:

Pasta with chicken, bacon, and peas is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover chicken and bacon. This dish is sure to please everyone at the table.
