In summer, however, my husband doesn't care for hot meals, so I make it as a main dish. We're recent city transplants with two young children, ages 6 and 3.

2 (5 ounce) cans ham
4 large hard-boiled eggs
1 medium onion
3 tablespoons sweet pickle relish
3/4 cup mayonnaise

  • Cook pasta according to package directions.
  • While pasta is cooking, peel and dice boiled egg and onion. Drain cans of ham and place in a bowl. Using a fork, shred the ham.

4 Tbsp white wine vinegar, i have used red also
2 Tbsp dijon mustard
2/3 c extra virgin olive oil
2/3 c sour cream
1/2 c red onion, minced
6 oz cooked ham, diced small
3/4 c frozen baby peas, thawed
2 ribs celery, diced
1/2 c cheddar cheese, shredded
2 hard boiled eggs, chopped
2 Tbsp fresh dill, chopped..i have used dried dill
2 Tbsp milk
2 tsp salt
pepper to taste

Steps:

  • 1. Cook pasta according to package instructions. Drain well and let cool slightly. Transfer to a large bowl.
  • 2. In a small bowl, combine the vinegar and mustard. Slowly drizzle in the olive oil while whisking.
