PASTA ROSA VERDE

Pasta Rosa Verde image

This pasta makes a beautiful presentation with the fresh tomatoes and baby spinach. The name means red and green pasta, and it's appropriate. I got this from my mother-in-law in an e-mail, but I have no clue where she found it. Easy to make, great dish for a week night when you don't really feel like cooking an involved meal, but you still want to eat something a little classy.

3 cups fresh Baby Spinach
1/4 cup lemon juice
1/4 cup pine nuts, toasted
gorgonzola
1 tablespoon olive oil

Tips:

  • Use fresh and high-quality ingredients: This is especially important for the vegetables, as they will be the main flavor components of the dish. Try to get your hands on the freshest vegetables you can find, and make sure they are in season.
  • Don't overcook the vegetables: You want them to be tender but still have a bit of a bite. Overcooked vegetables will become mushy and lose their flavor.
  • Use a good quality olive oil: This is another key ingredient that will add flavor to the dish. Look for an extra virgin olive oil that is fruity and has a peppery finish.
  • Don't be afraid to experiment with different ingredients: The beauty of this dish is that it is very versatile. You can add different vegetables, herbs, and cheeses to create your own unique version.

Conclusion:

Pasta rosa verde is a delicious and easy-to-make dish that is perfect for a quick and healthy meal. It is packed with flavor and nutrients, and it is sure to please everyone at the table. So next time you are looking for a new pasta recipe to try, give this one a try. You won't be disappointed!
