This is the acutal recipe (not a copycat) as posted on their website and as printed in the St. Louis Post Dispatch. THE REAL DEAL HERE MY FRIENDS (there are others posted on this website, but none of them are this exact recipe). This is so yummy and is a St. Louis tradition. This recipe serves 2, so feel free to double or triple it to feed your family. Serve as a main dish (as they do) with a Pasta House Salad on the side! It also makes a nice side dish to grilled chicken.

Tips:

  • Choose the right pasta. Short, thick-cut pasta like penne or rigatoni is best for this dish, as it can hold the broccoli and sauce well.
  • Cook the pasta al dente. This means that it should be cooked through but still have a slight bite to it.
  • Sauté the broccoli until it is tender-crisp. You don't want it to be too soft or mushy.
  • Use a flavorful cheese. Parmesan or pecorino Romano are both good choices.
  • Add some red pepper flakes for a touch of heat. If you like spicy food, you can also add a pinch of cayenne pepper.
  • Serve the pasta immediately, topped with grated cheese and chopped parsley.

Conclusion:

Pasta con broccoli is a quick and easy dish that is perfect for a weeknight meal. It is also a great way to get your kids to eat their vegetables. The combination of broccoli, garlic, and Parmesan cheese is always a winner. Serve this dish with a simple green salad and a glass of white wine for a complete meal.
