16 oz whole grain pasta (shells or rotini)
1 1/2 c canalope melon
1 1/2 c honeydew melon
1 1/2 c pineapple ( 1" cubes)
1 1/2 c fresh red seedless grapes (halved)
6 large strawberries, fresh
8 oz cream cheese
4 Tbsp limeade, frozen
2 Tbsp honey

Steps:

  • 1. Boil pasta in sugared water as directed on package for al dente. I add about 1/8c sugar to my water while boiling the pasta. That way the pasta is sweet not salty.

  • 3. While pasta is cooling cut fruit. If I am in a hurry I buy cut fruit in the produce department. Cut the grapes in half. It is just easier to eat. Set fruit aside.
  • 4. In a bowl mix cream cheese, limeaid and honey until smooth.
  • 5. In a large bowl combine all ingredients. (Pasta & fruit). Mix well but don't break up pasta. Now add your cream cheese dressing. You want is well dressed but not soupy. Refrigerate until ready to enjoy.

ACINI DI PEPE SALAD

Acini di pepe is the Italian word for peppercorns. Any tiny round-shaped pasta works well in this chilled fruit salad. Great in the summer, but my family asks for it every holiday. Every time I bring this to a party I get requests for the recipe.

CHRISTINE'S PASTA FRUIT SALAD

Christine's Pasta Fruit Salad image

This fruit salad is awesome- I adapted it from an old recipe given to me years ago. People often won't try it at first because they think it's made with tapioca, but it's actually made with acini de pepe, a tiny little pasta ball. Once they try it, it disappears... My sister-in-law claims to be able to lose a couple of pounds by eating this for lunch for a week!

Categories     Penne

Time P2DT30m

Yield 16 serving(s)

Number Of Ingredients 8

2 (16 ounce) cans crushed pineapple or 2 (16 ounce) cans pineapple tidbits
2 (12 ounce) cans mandarin oranges
2 (12 ounce) jars maraschino cherries
1 lb acini di pepe pasta
1 cup sugar
1 egg
4 tablespoons cornstarch
1 (24 ounce) container whipped topping

Steps:

  • Cook and drain the pasta according to package directions, rinse with cold water and drain well; set aside.
  • Drain the pineapple and oranges- save the juice! Also drain the cherries and save the juice, but separate from other juices.
  • Mix all the drained fruit in with your pasta. You may want to cut up your cherries (sometimes I do, sometimes I'm too lazy).
  • Take the orange and pineapple juice and put into a large saucepan. Use a hand blender to add the egg and mix well; then add your sugar. Bring to a boil, then add the cornstarch mixed with a bit of cold water. Boil all together for 1 minute. This must cool completely- then add 1/2 of the cherry juice and discard the rest.
  • Now add your cooled juice mixture to your pasta and fruit. Mix together well, then add cool whip.
  • Refrigerate at least 2 hours before serving.
  • If you cannot find acini de pepe pasta in your store, you can substitute with those little bitty stars pasta, or the pasta that looks like rice/melon seeds, but when I do the packages of those end up being more than 1 lb- it works out fine though, don't try to even it out to 1 lb, just use it as is.

Tips:

  • Choose the right pasta. Short pastas, like penne, rotini, and macaroni, are best for fruit salad. They hold the fruit well and don't get too soggy.
  • Cook the pasta al dente. This means cooking it until it is just tender, but still has a slight bite to it. Overcooked pasta will be mushy and won't hold its shape in the salad.
  • Use fresh, ripe fruit. This will ensure that your salad is flavorful and delicious. Avoid fruit that is bruised or overripe.
  • Cut the fruit into bite-sized pieces. This will make it easier to eat the salad and will help the flavors to meld together.
  • Add a variety of colors and textures to your salad. This will make it more visually appealing and interesting to eat. Some good options include grapes, strawberries, blueberries, oranges, pineapple, and kiwi.
  • Don't be afraid to experiment with different flavors. You can add herbs, spices, or nuts to your salad to create a unique and delicious dish.

Conclusion:

Pasta fruit salad is a refreshing and delicious summer dish that is perfect for potlucks, picnics, and barbecues. It is easy to make and can be customized to your liking. With a few simple tips, you can make a pasta fruit salad that is sure to impress your friends and family.
