2 to 3 tablespoons olive oil, plus more as needed
Kosher salt and black pepper
1/2 pound thick-cut bacon, diced
1 packed cup fresh sage leaves
1 pound short pasta, such as gemelli, casarecce or penne
Zest and juice of one 1 lemon, separated
1/2 cup grated Parmesan cheese, plus more for serving

Steps:

  • Heat the oven to 425 degrees. Place the cauliflower on a sheet pan. Drizzle with 2 to 3 tablespoons olive oil, sprinkle with 3/4 teaspoon salt and 1/2 teaspoon pepper, and toss to coat. Roast, tossing occasionally, until tender and browned all over, 20 to 25 minutes. While the cauliflower roasts, bring a large pot of water to a boil.
  • Heat a large (12-inch) skillet over medium-high. Add the bacon and cook, stirring occasionally, until crisp, 5 to 7 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate. Add the sage leaves to pan and fry until they begin to brown, 1 to 2 minutes. Using a slotted spoon, transfer the sage leaves to the plate with the bacon. Drain all but 3 tablespoons of fat from the skillet (or add additional olive oil, if needed) and remove from heat.
  • Add 1 tablespoon salt to the boiling water and cook the pasta until just al dente, reserving 1 1/2 cups of the pasta water. Drain the pasta and add to the reserved skillet; heat over low. Pour or squeeze the lemon juice over the pasta, along with 1 cup pasta water and the 1/2 cup grated Parmesan. Toss until the sauce comes together.
  • Stir in the cauliflower, bacon and sage, adding a splash more pasta water if the pasta seems dry. Season with salt and pepper. Sprinkle with lemon zest, and serve with extra Parmesan on the side.

1 small or 1/2 large head of cauliflower (about 1 pound), cut into small florets
2 garlic cloves, finely chopped
1 tsp. kosher salt, plus more
1/2 teaspoon freshly ground black pepper
1 can chickpeas, drained, rinsed, patted dry
1/4 cup (1/2 stick) cold unsalted butter, divided
8 ounces casarecce, gemelli, or other medium pasta
3 tablespoons fresh lemon juice
6 cups baby arugula

Steps:

  • Heat 4 Tbsp. oil in a large deep-sided skillet over medium-high. Add capers and cook, swirling pan occasionally, until they burst and are crisp, about 3 minutes. Using a slotted spoon, transfer capers to a paper towel-lined plate; set aside. Reserve oil in skillet.
  • Cook cauliflower in same skillet over medium-high heat, stirring frequently, until beginning to brown, about 3 minutes. Reduce heat to low and add garlic, 1 tsp. salt, and 1/2 tsp. pepper. Cover and cook until cauliflower begins to soften, about 4 minutes. Uncover and increase heat to high. Add chickpeas, 2 Tbsp. butter, and remaining 2 Tbsp. oil and continue to cook, stirring occasionally, until cauliflower and chickpeas are lightly browned, about 5 minutes.
  • Meanwhile, cook pasta in large pot of boiling salted water, stirring occasionally, until al dente. Drain, reserving 1 cup pasta cooking liquid.
  • Remove skillet from heat and add lemon juice, 1/2 cup pasta cooking liquid, and remaining 2 Tbsp. butter. Add pasta, tossing and adding more pasta cooking liquid as needed, until coated.
  • Divide arugula and pasta among bowls, stirring to combine. Top with reserved crispy capers.

Steps:

  • Heat oven to 425 degrees. In a large bowl, toss cauliflower with olive oil, salt and 1/4 teaspoon pepper. Spread onto a rimmed baking sheet in an even layer, and bake for 20 minutes.
  • Add leeks, garlic and thyme to the cauliflower on the sheet pan, then roast another 20 minutes, tossing the vegetables halfway through, until they are very tender and deeply caramelized.
  • Meanwhile, bring a large pot of heavily salted water to a boil. Cook pasta until it is 1 minute shy of being al dente. (It will continue to cook in the residual heat of the pot.) Scoop out about 1 cup pasta water (a coffee mug is good for this), then drain pasta. Return the pasta to the empty pot, along with butter, Gorgonzola, remaining 3/4 teaspoon pepper and 1/2 cup pasta water, stirring to melt cheese.
  • Toss roasted vegetables into pasta, then stir in lemon juice and salt and pepper to taste. Add more pasta water if mixture looks dry. To serve, spoon into bowls and top with chives and sprinkle of thyme leaves.

12 ounces Swiss chard, stems sliced, leaves torn into 2-inch pieces
1 pound cauliflower, cut into small florets (4 cups)

Kosher salt and freshly ground pepper
1 pound campanelle
2 tablespoons unbleached all-purpose flour
1 cup sour cream
8 ounces Gruyere, grated (2 cups)

Steps:

  • Preheat oven to 425 degrees. In a large, straight-sided skillet, melt half of butter over medium-high. Add garlic, chard stems, cauliflower, and sage. Season with salt and pepper. Cook, stirring, until garlic is golden, 2 minutes. Add 1/2 cup water; cover. Cook until cauliflower is just tender, 5 minutes. Transfer to a bowl; stir in chard leaves.
  • Cook pasta in a pot of salted boiling water until al dente. Drain, reserving 1 1/2 cups water. Add remaining butter and flour to skillet; cook over medium-high, whisking, until toasted, 1 minute. Slowly whisk in pasta water until smooth. Bring to a boil; cook, whisking, until mixture coats the back of a spoon, about 2 minutes. Reduce heat to low; whisk in sour cream and 1 1/2 cups cheese. 1 small cauliflower or 1/2 large cauliflower, broken into florets about 1 pound
Salt to taste
2 tablespoons extra virgin olive oil
2 garlic cloves, minced
1/4 teaspoon red chili flakes
1 14-ounce can chopped tomatoes with juice, pulsed a few times in a food processor or mini processor
Pinch of sugar
2 tablespoons capers, rinsed and chopped
3/4 pound perciatelli (bucatini)
1/4 cup chopped fresh parsley
2 ounces pecorino, grated (1/2 cup), or 1 ounce each pecorino and Parmesan

Steps:

  • Bring a large pot of water to a boil while you core the cauliflower and break it into florets. Add a generous amount of salt to the water and blanch the cauliflower for 5 minutes, or until tender. Use a skimmer or strainer to scoop the cauliflower from the water and transfer to a bowl of cold water. Drain and chop the florets into small pieces. Keep the water at a simmer.
  • Heat the oil over medium heat in a wide, heavy skillet and add the garlic and chili flakes. Cook, stirring, until the garlic is fragrant, about 30 seconds, and stir in the puréed tomatoes, a pinch of sugar, and salt to taste. Add the capers and cauliflower and simmer 10 to 15 minutes, until the tomatoes have cooked down and smell fragrant. Taste and adjust seasonings.
  • Bring the water in the pot back to a boil and add the perciatelli. Cook al dente, usually about 7 or 8 minutes. Add about 1/2 cup of the pasta water to the pan with the cauliflower and stir. Drain the pasta and add to the pan, along with the parsley and the pecorino. Stir together and serve.

I got this recipe from the "Shut up and Mangia" website. ZAAR is my favorite website to save all my recipes to. The author writes: "One of my old family recipes is this mostaccioli and cauliflower dish. My Grandmother made this dish for almost every occasion. It's different and delicious. I never ate ham when I was younger, so when I went to my grams house she alway made sure that I something other than the ham to eat. I'm the only one who still makes it. But, as soon as my cousins in California and New Mexico find out I have the recipe I'm sure they'll try to make it themselves. This combination can be made two ways. You could mix the ingredients to be very thick and creamy with no trace of cauliflower or you can mix it and leave larger pieces of cauliflower. Which ever way you decide to make it I can assure you it's a very filling dish. I make this recipe at least once every two weeks. The kids are just starting to enjoy it but I'm sure they will be making it for their children in the future."

1 lb mostaccioli pasta
2 heads cauliflower
4 -5 garlic cloves, chopped
3 bunches of long green onions, chopped
1/2 cup butter
2 tablespoons vegetable oil
1 cup seasoned bread crumbs
salt
fresh ground black pepper
freshly grated parmesan cheese

Steps:

  • Boil cut up pieces of cauliflower in 6 quarts of water until tender.
  • Saute long green onions, garlic and about a half a cup of bread crumbs in one stick of butter for about 5 minutes or until breadcrumbs are slightly brown.
  • With a slotted spoon remove cauliflower and add to the breadcrumb mixture.
  • Stir adding remaining butter and bread crumbs.
  • Cook the pasta in the cauliflower water until done. Around 10 minutes.
  • Add around a cup of cauliflower water to the breadcrumb mixture to moisten.
  • Mix the mostaccioli and cauliflower together .
  • Top with freshly grated Parmesan cheese and you ready to serve.
  • Not a good time to diet if you make this dish.

  • Preheat oven to 450 degrees. Toss together cauliflower, onion, capers, and 2 tablespoons oil. Season with salt and pepper.Spread vegetables in a single layer on a rimmed baking sheet.

1/8 teaspoon dried nutmeg
1/8 teaspoon cayenne pepper, to taste

  • Set oven to 400 degrees F.
  • Butter a 13 x 9-inch baking dish.
  • In a heavy-bottomed medium-size saucepan, melt the 1/4 cup butter, whisk in the thyme, nutmeg, fresh garlic, cayenne pepper and black pepper; whisk/mix for 2 minutes.
  • Add/whisk in the flour, mix for 2-3 minutes.

  • Steam the cauliflower florets and core over boiling water for about 3 minutes. Taste a piece. It should be on the verge of tenderness and not quite fully cooked. Set it aside. With Shrimp: When wild Gulf shrimp are in season, take advantage of their sweet goodness. Peel 1 pound shrimp, then sauté them over high heat in olive oil until pink and firm, after 5 minutes or so. Toss them with chopped garlic and parsley and divide them among the individual pasta plates or heap them over the top of the communal dish. Omit the cheese.

4 TBSP. extra virgin olive oil
½ medium cauliflower, (about 10 oz.), cored & cut into small florets
2-3 med. cloves of garlic, minced
¼ tsp. (or just a pinch) red pepper flakes
½ tsp. sea salt
¼ tsp. dried oregano
1 cup crushed tomato sauce
½ cup warm water
¼ cup Kalamata olives, pitted & chopped
1 TBSP. small capers, rinsed well
8 oz. Gemelli pasta (or similar)
2 TBSP. fresh parsley, minced
½ cup freshly grated Parmesan cheese
--- more sea salt & freshly ground black pepper (if needed)

Steps:

  • Place a large, 12-inch nonstick skillet over medium-high heat, add the olive oil when the skillet is hot, and cook the cauliflower florets for about 6-8 minutes, tossing until it is lightly brown on all sides. Next add the garlic, the pepper flakes, the salt and the oregano. Cook for another two minutes, or, until the garlic is fragrant but not browned. Stir in the tomatoes and the warm water, the olives, and the capers. Simmer gently for about 8-10 minutes, stirring occasionally.
  • Meanwhile cook the pasta in a medium pot for about 8 minutes, or, until it is al dente (cooked through, but still firm).
  • Lift the pasta from the pot with a slotted spoon and transfer it to the skillet with the sauce. Turn the heat down and add some of the cooking water to the skillet to loosen up the sauce. Drizzle the pasta with a little olive oil. Remove the skillet from the stove top and add most of the Parmesan cheese and the parsley. Check the consistency of the sauce. If necessary, add some more of the cooking water to thin it out a bit, as needed. Check the sauce and adjust the seasoning if necessary.
  • Serve at once on warm plates with the rest of the grated Parmesan cheese.

Steps:

  • Preheat the oven to 400°F Spread the cauliflower on a baking sheet, drizzle with the oil and toss; season with salt and pepper. Bake until browned, about 20 minutes.
  • Meanwhile, in a small, heavy saucepan, melt the butter over medium-high heat. Cook, without stirring, until the butter is golden-brown, about 6 minutes. Stir in the sage and remove from the heat.
  • In a large pot of boiling, salted water, cook the pasta until al dente. Reserve 1/2 cup of the cooking water, drain and return the pasta to the pot. Stir in the ham, cauliflower and reserved pasta cooking water. Stir in the sage butter and season with salt and pepper.

  • In a large pot of boiling salted water, cook pasta according to package instructions. Reserve 1/2 cup pasta water; drain pasta.
  • Meanwhile, in a medium pot, heat oil over medium. Add shallot and cook, stirring occasionally, until soft, about 5 minutes. Add wine and cook until almost evaporated, about 5 minutes. Add collards and cook, stirring occasionally, until bright green and crisp-tender, 8 minutes. Add cauliflower, lemon zest, and pasta. 12 oz spaghetti (3/4 box) or pasta of your choice
6 slice bacon
1/3 c fresh sage leaves
1 small head cauliflower cut into small florets
1/4 tsp salt
1/4 tsp pepper
3/4 c grated pecorino or parmesan cheese

Steps:

  • 1. Cook the pasta according to the package directions. Reserve 3/4 cup of the cooking water; drain the pasta and return it to the pot.
  • 2. In a large skillet over medium heat, cook the bacon until crisp, 6 to 8 minutes. Transfer bacon to a paper towel-lined plate. Let cool; then break into pieces.
  • 3. Add the sage to the bacon drippings in the skillet and cook over medium heat, turning once, until crisp, 1 to 2 minutes. Transfer to the paper towel-lined plate.
  • 4. Add the cauliflower, 1/4 cup water, salt and pepper to the skillet and cook, covered, for 2 minutes. Uncover and cook, tossing frequently, until golden and tender, 3 to 4 minutes more.
  • 5. Add the reserved cooking water and 1/2 cup of the cheese to the pasta and toss until creamy. Add the cauliflower, sage, and bacon, and toss to combine. Sprinkle with the remaining 1/4 cup of cheese before serving.
  • 6. NOTE: If you're pinched for time, you may use a jar of real bacon bits and 2 (10 oz.) packages of frozen cauliflower, thawed. One to two tablespoons dried sage may be substituted for 1/3 cup fresh sage.

2 heads cauliflower
1 medium onion
4 cloves garlic
1 pound whole-wheat pasta
Extra-virgin olive oil
Salt and pepper
1 pinch red pepper flakes
White wine vinegar
1/2 lemon
1/2 cup toasted walnuts
4 ounces ricotta salata or feta cheese

Steps:

  • Put a large pot of water on to boil. Cut the cauliflower into small flowerets. Peel the onion and slice it very thin. Peel and finely chop the garlic. Put the pasta on to cook. Saute the cauliflower in olive oil in a large saute pan. When the cauliflower begins to soften, season with salt and pepper and add the sliced onion and red pepper flakes. Saute over medium to high heat until the vegetables are brown and tender. The cauliflower should still be slightly crunchy and should not taste steamed. Add the garlic and remove from the heat, tossing and stirring so the garlic doesn't burn; if it starts to brown, add a splash of water. Add a few drops each of vinegar and lemon juice and the toasted walnuts. Taste and correct the seasoning. When the pasta is done, drain and add to the cauliflower, adding enough extra-virgin olive oil to coat the pasta thoroughly, toss together and serve, with the cheese crumbled over the dish.

Tips:
