Steps:
- Make brownies:
- Preheat oven to 350°F. Line bottom and sides of a 9-inch square baking pan with wax paper or greased foil.
- Melt chocolate and margarine in a metal bowl set over a saucepan of barely simmering water, stirring until smooth. Remove from heat and cool 5 minutes.
- Beat eggs, sugar, and salt in a large bowl with an electric mixer on high speed until pale and thick. Beat in chocolate in 3 batches on low speed. Stir in zest, matzo meal, and nuts just until blended.
- Spread batter in baking pan and bake in middle of oven until firm and a tester comes out clean, 25 to 30 minutes. Cool in pan on rack, then invert onto a platter and remove paper or foil.
- Make glaze:
- Whisk together sugar, cocoa, and wine in a small saucepan. Bring to a boil, whisking, then simmer 2 minutes, whisking occasionally. Add chocolate and whisk until melted. Remove from heat and whisk in margarine until smooth. Chill glaze, stirring occasionally, until spreadable.
- Spread glaze over brownies and arrange walnut halves on top. Cut into 16 squares with a large knife, wiping it off with a damp cloth between cuts.
PASSOVER BROWNIES
Need a chocolate fix during the holidays? Though I'm not Jewish, this recipe looked intriguing to me so I'm saving it as a gift the next time I'm invited to a Seder. (Yes, in my kitchen it would not be Kosher, but my friends are not that religious.) The combination of fruits --raisins, bananas and applesauce -- should give these a very moist brownie like texture.

EXCEPTIONAL PASSOVER BROWNIES
This recipe is from Claire Sauerhoff, pastry chef and owner of a New York bakery called "The Exceptional Brownie". Her bakery won COPIA'S "Best Darn Brownie Contest". To achieve a fudgy result, be careful that you don't overbake the brownies. After 35 minutes, begin to test for doneness with a cake tester or a toothpick that you stick in the middle of the pan. You're looking for the tester to come out with just a little batter on the end.

PASSOVER (PESACH) BROWNIES
I experimented for years to come up with a brownie made with matzo ... this is the best!

Steps:
- Beat eggs and sugar. Add oil. Mix in cake meal and cocoa. Add nuts (or use the nuts as a topping).
- Bake in a greased 9 x 13 inch pan at 325 degrees F (165 degrees C) for 35 minutes. The secret to moist brownies, Pesach or otherwise, is to underbake them. Check them at 30 minutes. I also put nuts on top rather than in the brownies for two reasons: They make the top look good without having to frost them and, for those who don 't or can't eat nuts, they are easily removed without having to search for them.

Tips:
- Mise en place: As with any baking project, it's helpful to gather and measure your ingredients before you begin. This will help you avoid any scrambling or forgetting crucial steps while you're in the middle of the process.
- Use high-quality chocolate: The quality of your chocolate will have a big impact on the final product. Look for chocolate with a cocoa content of at least 70%. You can use either semisweet or bittersweet chocolate, depending on your preference.
- Don't overmix the batter: Overmixing can result in tough, dry brownies. Mix the batter just until the ingredients are combined.
- Bake until a toothpick inserted into the center comes out mostly clean: A few moist crumbs are okay, but you don't want the brownie to be gooey or undercooked. Note that the type of baking dish you use will also affect the baking time. A glass or metal baking dish will conduct heat more quickly than a ceramic or stoneware dish, so you may need to reduce the baking time accordingly.
- Make the chocolate-wine glaze while the brownies are baking: This will give the glaze time to cool slightly before you pour it over the brownies.
- Let the brownies cool completely before cutting them: This will help them hold their shape and prevent them from crumbling.
Conclusion:
These Passover brownies with chocolate-wine glaze are a delicious and elegant treat that are perfect for any occasion. They're rich, fudgy, and have a beautiful crackly top. The chocolate-wine glaze adds a touch of sophistication and makes these brownies extra special. Whether you're serving them for Passover or just because, these brownies are sure to be a hit.
