Steps:
- In a small saucepan, combine sugar and water. Bring to a boil over medium-high heat. Let cool, and stir in passion fruit puree. CAMPARI AND PASSIONFRUIT SORBET
Steps:
- Place the water and sugar in a pan, bring to the boil and simmer for 5 minutes. Remove from the heat and allow to cool for a while. Halve the passion fruits and scoop out the flesh, seeds and juice using a spoon. Stir this up--you can pass it through a sieve to remove the seeds, but quite frankly I think that's palaver (nonsense). I like the seeds. Mix the passion fruit with the Campari and sugar syrup in a plastic tub or earthenware dish and place in the freezer. Generally, sorbet takes 2 hours to set. Try to stir it around every 1/2 hour if you remember. Serve on its own, with some seasonal fruit, or in a cone with some vanilla ice cream.;
PASSION-FRUIT NIEVE
_Nieve_, or "snow," is Mexico's sorbet, sold from carts throughout the country. Ours is a quick version, made with passion-fruit nectar instead of puréed and strained fruit. For the best flavor, look for a nectar that contains just water, passion-fruit juice, and sugar.

Steps:
- Combine orange juice, passionfruit pulp, sugar and liqueur in a large bowl.
- using electric mixer, beat egg whites until soft peaks form; using metal spoon, gradually fold egg whites into orange juice mixture.
- pour into ice cream maker and chill/churn for about 30 minutes.
Tips:
- Choose ripe and flavorful passion fruits. Look for fruits that are heavy for their size, have a deep purple or wrinkled skin, and yield to gentle pressure.
- Use a food processor or blender to puree the passion fruit pulp. This will make it easier to strain out the seeds.
- If you don't have a fine-mesh strainer, you can use a cheesecloth-lined colander to strain the passion fruit puree.
- Chill the passion fruit puree for at least 30 minutes before churning it in the ice cream maker. This will help the sorbet freeze more quickly and smoothly.
- If you don't have an ice cream maker, you can freeze the passion fruit puree in a covered container and stir it every few hours until it reaches a sorbet-like consistency.
- Serve the passion fruit sorbet immediately, or store it in the freezer for up to 2 weeks.
Conclusion:
This passion fruit sorbet is a delicious and refreshing treat that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. The sorbet is also a good source of vitamin C and antioxidants, making it a healthy and nutritious snack.
