PARTY CRAB PUFFS

I received this recipe years ago from my grandmother. She also told me to have fun being creative and experimenting in the kitchen. My friends request these little puffs at every gathering. -Jean Bevilacqua, Rhododendron, Oregon

Number Of Ingredients 13

1 cup water
1/2 cup butter, cubed
1/4 teaspoon salt
1 cup all-purpose flour
4 large eggs
FILLING:
4 hard-boiled large eggs, finely chopped
1 can (6 ounces) lump crabmeat, drained
4 ounces cream cheese, softened
1/4 cup mayonnaise
2 tablespoons finely chopped onion
2 tablespoons prepared horseradish, drained
Minced fresh parsley, optional

Steps:

  • Preheat oven to 400°. In a large saucepan, bring the water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from heat; let stand 5 minutes. Add 1 egg at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake 18-22 minutes or until golden brown. Remove to a wire rack. Immediately split puffs open; remove tops and set aside. Discard soft dough from inside. Cool puffs. , In a large bowl, combine filling ingredients. Just before serving, spoon 1 teaspoonful filling into each puff; sprinkle with parsley if desired. Replace tops.

These beautiful cheese puffs, gougeres, are as easy as they are delicious. Usually Gruyere cheese is used but I had some very sharp farmhouse Cheddar cheese in the fridge, so I decided to use that. As long as you are using a very sharp, full-flavored cheese I don't think you can go wrong. I love gougeres with Gruyere, but I think the extra-sharp Cheddar was just as good.

½ cup water
¼ cup butter
1 pinch salt
½ cup flour
2 large eggs
1 teaspoon fresh thyme leaves
1 teaspoon ground black pepper
½ cup shredded sharp Cheddar cheese, divided

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with a silicone baking mat.
  • Stir water, butter, and salt together in a pot; bring to a simmer. Reduce heat to medium and whisk flour into butter mixture until a paste-like dough forms, 2 to 3 minutes. Transfer dough to a bowl to cool until warm, 5 to 10 minutes.
  • Whisk 1 egg, thyme, and black pepper into cooled dough until egg is completely incorporated. Add remaining egg and whisk until completely incorporated into dough. Stir 3/4 the cheese into dough until combined. Scoop 1-inch balls of dough onto prepared baking sheet. Top each with remaining cheese.

EGG SALAD FILLING:

2 green onions, finely chopped
1 teaspoon salt
1/2 teaspoon curry powder
HAM SALAD FILLING:
1 can (4-1/4 ounces) deviled ham
3 ounces cream cheese, softened
2 tablespoons finely chopped green pepper
1-1/2 teaspoons prepared horseradish
1 teaspoon lemon juice

Steps:

  • In a saucepan over medium heat, bring water and butter to a boil. Add flour all at once and stir until a smooth ball forms. 2 ½ cups finely chopped deli corned beef
2 tablespoons chopped onion
2 tablespoons Dijon mustard
1 tablespoon mayonnaise
¼ teaspoon prepared horseradish
1 cup beer
½ cup butter
1 cup flour
¼ teaspoon salt
4 eggs

Steps:

  • Mix together the corned beef, onion, mustard, mayonnaise, and horseradish. Cover and refrigerate.
  • Preheat an oven to 450 degrees F (230 degrees C).
  • In a large pot, bring beer and butter to a rolling boil. Stir in flour and salt until the mixture forms a ball. Transfer the dough to a large mixing bowl. 1 cup Mayonnaise
5 Tablespoons grated Parmesan

  • Use small cookie cutters to cut shapes out of the bread and place on baking sheets (reserve the scraps to grind and keep in the freezer for future croquettes, meatballs, etc.) Pop under the broiler to lightly toast on one side Stir together the mayo, Parmesan, onion, and about 1 1/2 T of your seasoning of choice (if including garlic powder, only use about 1/4 t) Flip the bread and spread a small amount of the mayo mixture onto the un-toasted side Pop back under the broiler until bubbly and golden If you want to be fancy about it, arrange on the platter and sprinkle with fresh herbs, or top with thin slices of grape tomatoes, roasted red pepper, sliced olives, etc.

3 cups leftover mashed potatoes
2 eggs
Salt and pepper, to taste
1/4 cup crumbled goat cheese
Heaping 1/2 cup grated Cheddar cheese (reserve some for the top)
1/4 cup grated Parmesan cheese

Steps:

  • Crisp up prosciutto by placing on cooking parchment paper-lined cookie sheet and baking in 350°F oven 10 to 15 minutes or until crisp. Crumble. Set aside. Leave oven on.
  • In large bowl, stir together mashed potatoes, eggs, salt and pepper, goat cheese and slightly less than 1/2 cup Cheddar cheese. Divide mixture among 24 nonstick mini muffin cups. Sprinkle with remaining Cheddar and Parmesan cheeses. Pop in the oven for 30 minutes.
  • Top with crumbled prosciutto. Serve immediately.

Perfect little bites for Super Bowl Sunday and St. Patrick's Day parties! I came up with this recipe years ago, and it won in Taste of Home magazine and Better Homes and Gardens magazine. PASTRY PUFFS:
1 cup water
1/2 cup butter (1 stick)
1/2 cup regular flour
1/2 cup rye flour
1/2 tsp. garlic powder
2 tsp. dried parsley flakes
1/4 tsp. salt
4 eggs
caraway seeds, optional if you don't like them
FILLING:
2 (8 oz.) pkgs. cream cheese
2 (2 1/2 oz.) pkgs. corned beef, finely chopped
1/2 cup mayo, i use hellmann's
1/4 cup sour cream
2 Tbl. finely chopped chives
2 Tbl. finely chopped onion
1 tsp. spicy brown or horseradish mustard
1/2 tsp. garlic powder
10 pimiento-stuffed green olives, chopped

Steps:

  • 1. For pastry puffs: In a saucepan over medium heat, bring water and butter to a boil. Add flours, parsley, garlic powder and salt all at once; stir quickly until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Beat in eggs one at a time until smooth. Drop the batter by rounded teaspoonfuls 2 inches apart onto greased baking sheets. Sprinkle with caraway seeds. Bake at 400º for 18-20 minutes or until golden. Remove to wire racks. Immediately cut a slit in each puff crossways through center, but not all the way through, to allow steam to escape. (The top will open up like a cap.)Let cool. For filling: In a mixing bowl, mix well the first 8 ingredients, then stir in olives. Open puffs, stuff with filling, lightly close tops of puffs over filling. Cover, chill til serving. Makes 4 1/2 dozen.
  • 2. *Tip: If pastry puffs start to fall when you take them out of the oven, pop them right back in, they weren't done enough. They will immediately poof back up and then bake 2-3 minutes longer. Everyone's ovens are different!
