Steps:
- In a large saucepan cook onion and green pepper in the 2 tablespoons of butter until tender.
- Combine onion mixture in a bowl with chopped chicken and green chili peppers.
- Set aside.
- For sauce, in the same pan melt 3 tablespoons butter.
- Stir in flour, coriander and salt.
- Stir in chicken broth all at once.
- Cook and stir till thickened and bubbly.
- Remove from heat.
- Stir in sour cream and 1/2 cup of the cheese.
- Stir 1/2 cup of the sauce into the chicken mixture.
- Fill each tortilla with about 1/4 cup of the chicken mixture.
- Roll up and arrange in a 13x19x2 baking dish.
- Pour remaining sauce over and sprinkle with remaining cheese.
- Bake, uncovered in a 350 oven about 25 minutes or until bubbly.
- Can be made ahead of time and frozen. Place a large sheet of heavy duty foil in your baking dish with enough foil over the end to fold up and over the frozen casserole. Make the casserole up until you are ready to bake it. Freeze it solid. Remove frozen casserole from your dish and encase in the excess foil for storage. This frees up the dish for other meals. When you wish to heat it, remove foil from the still frozen casserole, and place back into the dish that you froze it in initially to thaw; bake as directed.
MEXICAN PARTY CASSEROLE
This casserole is one of my favorite potluck contributions, as it's easy to make lots of it fast, and folks love it.

Steps:
- Equipment: 2 deep lasagne pans.
- On the bottom of each pan, spread a layer or two of chips, flattening as needed.
- I used about 5 oz of the chips in each pan.
- Drop spoonfuls of refried beans atop the chips layer, using 16 oz in each pan.
- Once you've got all of the spoonful drops down, use the back of the spoon to spread the refried beans around more evenly.
- Pour 8 oz salsa over each pan, and spread about.
- Over each pan, crumble 2.5 oz of chips.
- Layer 7.5 oz of the corn in each pan.
- Chop up the bell peppers, and layer them evenly in the 2 pans.
- Chop up the avocadoes and olives, and layer them evenly in the pans.
- Chop up the cilantro, and sprinkle it over the pans.
- Using the remaining refried beans, drop spoonfuls atop the pans, and spread them around.
- (They won't cover the whole surface; that's ok).
- Spread the remaining salsa in a thin layer across the top of each pan.
- Chop the cherry tomatoes, and sprinkle those over the top of each pan.
- Crumble the rest of the chips, and sprinkle those over the top.
- Bake at 450 degrees for about 1/2 hour, maybe more (keep an eye on it after the first 20 minutes as ovens can vary); I turn the oven off once the top layer of chips is lightly browned and a forkful swiped out of the bottom of the pan is hot.
- (Note- Don't worry too much about the quantities of ingredients; this is not a recipe where precision matters. If you have more or less of something, it'll still taste good).

- In a large resealable plastic bag, combine the flour, salt and pepper; add beef in batches; shake to coat. In a large skillet, cook beef over medium heat in oil until meat is no longer pink. Place beef and drippings in a greased shallow 2-1/2-qt. baking dish. , In the same skillet, add the water, broth, garlic, onion, thyme and rosemary; bring to a boil. - In a large skillet, bring chicken and water to a boil. Reduce heat and simmer, uncovered, for 3 minutes on each side (chicken will not be completely cooked). Remove chicken from cooking liquid and place down the center of an ungreased 13-in. x 9-in. baking dish; set aside. , Cook zucchini and carrots in cooking liquid for 5 minutes or until zucchini just begins to soften; drain and set aside. In a large saucepan, melt 2 tablespoons butter; stir in flour and cook for 1 minute. Stir in cream until smooth. Add bouillon, mustard, 1/4 teaspoon dill, pepper and nutmeg. THE BOMB SAUSAGE EGG CASSEROLE WITH SECRET PARTY INGREDIENTS
This riff on the sausage/egg casserole was born tonight and caused us to fall off our chairs. Caught lightning in a bottle with this so will notate exactly what I did. NOTE: there are many recipes with a number of these basic ingredients. Since there were a few new elements, significantly varied portions and particular techniques used, I'm listing it as a separate recipe.

Steps:
- -preheat oven to 360.
- two parts to this prep; the sausage mix prep and the egg mix prep.
- THE SAUSAGE MIX.
- -break sausage into small pieces and begin to brown in 1 tablespoon of the olive oil, never more than medium heat.
- -after about five minutes, push sausage to one side.
- -add chopped onion and crushed garlic to other side of pan; add basil leaves, torn into small, dime-size pieces; place this side of the pan directly over the heat to start the onions on their way. Keep it moving and keep heat low so the garlic doesn't burn.
- -add some fresh crushed black pepper and dashes of kosher salt.
- -once onions start to soften and brown a bit, mix in with sausage.
- -continue to mix and modulate heat from medium to low, careful not to burn the meat, until sausage is brown. Turn off heat.
- THE EGG MIX.
- -beat the five eggs.
- -add milk and half & half.
- -add lightly toasted and cubed Brownberry's Oatnut bread [if you don't have this, what you should know is it's full-bodied and has a slight sweetness, as well as the obvious texture from, well -- oats and nuts.this is a major flavor/texture secret in the final tasting].
- -add 2/3 cup of shredded cheddar cheese.
- -add dried mustard and some more pepper.
- COMBINING.
- -2tsp of olive oil rubbed into bottom/sides of 2 inch deep/9 inch diameter ceramic baking dish.
- -sausage mixture into bottom of dish.
- -add egg mixture over the top.
- -spread remaining 1/3 cup cheddar cheese over the top.
- -more crushed black pepper and and couple dashes of paprika dusted over the top.
- ---***** I forgot to add a little baking powder to this to keep the egg fluffy. Will add a teaspoon next time******.
- BAKE.
- -45 minutes at 360 degrees, fork test in center comes out clean.
- -let set for 5 minutes and serve!
