4 garlic cloves, crushed
3 tablespoons extra virgin olive oil
1/2-1 teaspoon red pepper flakes, depending on taste

  • Cut potatoes into wedges and pile them on the center of the foil.
  • Combine the garlic with the potatoes and sprinkle the EVOO, red pepper flakes, parsley, and lots of salt and pepper.
  • Pull the ends of the foil together and fold them over, then close the opposite sides to form a packet.
  • Cook for 20 min, turning once.
  • If cooking on a grill, place packet to the side and not over the direct heat to prevent scorching.

Tips for Making Perfect Parsley Red Potatoes:

  • Choose the right potatoes: Use small, waxy potatoes like Red Bliss or fingerling potatoes. These potatoes hold their shape well and won't fall apart when cooked.
  • Cut the potatoes evenly: Cut the potatoes into uniform pieces so that they cook evenly. If the pieces are too big, they won't cook through; if they're too small, they'll overcook and become mushy.
  • Parboil the potatoes: Before roasting, parboil the potatoes for a few minutes. This helps to remove some of the starch from the potatoes, which makes them less likely to stick together. It also helps them cook more evenly.
  • Use plenty of olive oil: Olive oil helps to coat the potatoes and prevent them from drying out. Be generous with the olive oil, but don't overdo it or the potatoes will become greasy.
  • Season the potatoes well: Use a combination of salt, pepper, garlic powder, and paprika to season the potatoes. You can also add other herbs and spices, such as rosemary, thyme, or oregano.
  • Roast the potatoes at a high temperature: Roast the potatoes at a high temperature (425 degrees Fahrenheit) so that they get crispy on the outside and tender on the inside. Make sure to stir the potatoes occasionally so that they cook evenly.
  • Garnish with parsley: Before serving, garnish the potatoes with fresh parsley. This adds a pop of color and flavor to the dish.

Conclusion:

Parsley red potatoes are a delicious and easy-to-make side dish that can be enjoyed with a variety of meals. They're perfect for weeknight dinners, potlucks, and holiday gatherings. With a few simple tips, you can make sure that your parsley red potatoes turn out perfect every time.
