1 French-bread baguette
1/4 cup (1/2 stick) butter
1/3 cup extra-virgin olive oil
1 garlic clove, pressed
3/4 cup (packed) freshly grated Parmesan (about 2 1/2 ounces)

Steps:

  • Preheat oven to 350°F. Slice baguette on sharp diagonal to make about twenty 6- to 7-inch-long, 1/4-inch-thick slices. Melt butter with oil and garlic in small saucepan over medium heat. Remove from heat. Brush butter mixture over both sides of bread slices. Arrange bread in single layer on 2 baking sheets. Sprinkle cheese over bread. Sprinkle with salt and pepper. Bake until bread is crisp, about 13 minutes. (Can be made 1 day ahead. Store airtight at room temperature. Rewarm in 350°F oven 3 minutes.)

4 New York strip steaks
4 slices French bread, toasted
4 tablespoons freshly grated parmesan cheese
3 tablespoons unsalted butter
2 green onions with tops, finely chopped
1 -2 garlic clove, minced
4 1/2 tablespoons sour cream
3/4 teaspoon Worcestershire sauce
6 -8 drops Frank's red hot sauce or 6 -8 drops jalapenos, sauce

Steps:

  • Preheat oven broiler.
  • In a skillet, melt butter over moderately low heat and cook the green onions and garlic until they are soft.
  • Remove skillet from the heat and whisk in the sour cream, Worcestershire sauce, red hot sauce or jalapeno hot sauce.
  • Taste and adjust seasoning, adding salt and pepper.
  • Cover and keep warm.
  • Grill steaks to the desired degree of doneness.
  • While the steaks are grilling, prepare the toasts.
  • Sprinkle each slice of toast with Parmesan cheese and broil for about 1 minute, until cheese is bubbly.
  • When steaks are done, transfer to a carving plater and allow to rest for about 1 minute.
  • Slice the steaks, reserving the juice.
  • Add the juice to the sour cream/onion/garlic sauce and stir.
  • To Serve:.
  • Place the Parmesan toast on the plates.
  • Arrange the steak slices on top of the toast in overlapping slices and then the remaining slices around the toast.
  • Put some of the sauce over the steaks and serve.

For Parmesan toasts
1 baguette (about 15 inches long), cut diagonally into 1/4-inch-thick slices
1/4 cup olive oil
1/3 cup freshly grated Parmesan (about 1 ounce)
1/4 cup pine nuts
6 tablespoons olive oil
1 firm eggplant (about 11/4 pounds), cut into 1/2-inch cubes
1 onion, chopped
2 garlic cloves, 1 chopped and mashed to a paste with 1/2 teaspoon salt and 1 minced
3 vine-ripened tomatoes (about 3/4 pound total), cut into 1/2-inch cubes
1/2 cup packed fresh basil leaves, washed well, spun dry, and chopped
1/3 cup packed fresh flat-leafed parsley leaves, washed well, spun dry, and chopped
3 tablespoons fresh lemon juice
1/2 teaspoon sugar

Steps:

  • Make Parmesan toasts:
  • Preheat oven to 325° F.
  • On a large baking sheet arrange bread slices in one layer and lightly brush both sides of each slice with oil. Toast slices in middle of oven 15 minutes and turn over. Sprinkle slices with Parmesan and toast 15 minutes, or until golden. Transfer toasts to a rack and cool. Toasts may be made 2 days ahead and kept in a sealable plastic bag at room temperature.
  • In a large heavy skillet toast pine nuts in 3 tablespoons oil over moderate heat until golden and with a slotted spoon transfer to a small bowl. In oil remaining in skillet sauté eggplant, onion, minced garlic, and salt to taste over moderately high heat, stirring, until eggplant begins to brown. Cook mixture, covered, over moderate heat, stirring occasionally, until eggplant is tender, about 10 minutes, and transfer to a bowl. Cool mixture.
  • Into eggplant mixture stir garlic paste, tomatoes, basil, parsley, lemon juice, sugar, remaining 3 tablespoons oil, and salt and pepper to taste. Spread may be made 2 days ahead and chilled, covered. Keep toasted pine nuts in a sealable plastic bag at room temperature. Bring spread to room temperature before serving.
  • Just before serving, stir pine nuts into spread. Serve spread with toasts.

1 large onion, sliced thin
2 tablespoons olive oil
2 medium carrots, cut into 1/8-inch-thick slices
3 cups 1 1/2-inch flowerets of cauliflower (about 1/2 head)
3 small zucchini, halved lengthwise and cut crosswise into 1/8-inch-thick slices
3 cups cooked dried borlotti beans (cranberry beans) or Roman beans or rinsed and drained canned beans (about two 15-ounce cans)
3 cups beef broth
3 cups water
a 14 1/2- to 16-ounce can chopped tomatoes including juice
For toasts
3 ounces (about three 1/2-inch slices) Italian bread
1 large garlic clove, halved lengthwise
6 freshly grated Parmesan (about 1 ounce)

Steps:

  • In a 4-quart heavy saucepan cook onion in oil over moderate heat, stirring occasionally, until pale golden. Add carrots and cauliflower and cook, stirring occasionally, 3 minutes. Add zucchini and cook, stirring occasionally, 3 minutes. Stir in beans, broth, and water and simmer until vegetables are just tender, about 30 minutes. Stir in tomatoes with juice and simmer, stirring occasionally, until soup is thickened, about 30 minutes. Season soup with salt and pepper.
  • Make toasts:
  • Preheat oven to 375°F.
  • On a baking sheet toast bread lightly in middle of oven. While bread is hot rub top of each toast with garlic and sprinkle with Parmesan. Bake toasts until Parmesan is melted, about 5 minutes.
  • Serve minestrone with toasts.

EASY SPICY PARMESAN TOASTS

These are a favorite in my house, they are incredibly easy to make and so good!. A good olive oil and Parmesan cheese is a must with this. Purchase the long narrow French baguette for this and make certain that it is a day old, it makes slicing easier. I have even made these using melted butter in place of olive oil, and added in some garlic powder with the cayenne/cheese mixture. If you like super spicy just increase the cayenne slightly. These make a great late-nite or weekend snack! Yield is only estimated depending on the size of the baguette.

1/3 cup olive oil (you might need a bit more)
1/2 teaspoon salt (or to taste)

16 large sun-dried tomatoes
150g (4 3/4 ounces) fresh Parmesan cheese
Pesto
1 cup (50g/1 2/3 oz) firmly packed fresh basil leafs
2 tbs chopped fresh chives
4 tbs pine nuts
2-3 garlic cloves, peeled
1/4 cup (60ml/2 fl oz) olive oil

Steps:

  • Cut the bread into thin slices and toast the slices under a hot grill until they are golden brown. To make Pesto. Place the basil leafs, chives, pin nuts, garlic and olive oil in a food processor. Process 20 to 30 seconds, until smooth. Spread the pesto mixture evenly over the toasted slices. Top with stripes of tomato and shavings of Parmesan.

Tips:

  • For the best results, use a good quality Parmesan cheese. Grated Parmesan from a block is ideal, but you can also use pre-packaged grated Parmesan if you're in a hurry.
