Time 25m

Number Of Ingredients 8

2 pounds (1 kg) side wild salmon fillet ((about 2 kg | 4 pounds))
2/3 cup plain breadcrumbs
2/3 cup grated parmesan cheese
1/4 cup finely chopped parsley
4 cloves garlic (, minced)
1/3 cup melted butter
Salt and pepper
Lemon wedges (, to serve)

Steps:

  • Position a rack in the middle of the oven. Preheat oven to 400°F | 200°C. Line a baking tray / sheet with a large piece of foil. Place the salmon fillet, skin side down, on the baking sheet; set aside.
  • Mix together the breadcrumbs, parmesan cheese, parsley and garlic in a small bowl. Pour in the melted butter; season with 3/4 teaspoon salt and 1/3 teaspoon pepper (or to taste). Using your hands (it's easier than using a wooden spoon), mix the ingredients together until the breadcrumbs absorb the butter (about 40 seconds).
  • Pour the mixture over the salmon, pressing it into the top until the fillet is completely covered. Lightly spray salmon with cooking oil spray for a golden crumb.
  • Bake uncovered for 12-15 minutes (depending on the thickness of your fillet), until the crust is golden and the salmon is cooked and flakes easily with fork.
  • Serve with lemon wedges and a squeeze of lemon (optional). Team with a salad, steamed vegetables, rice or mashed potatoes.

Time 30m

Number Of Ingredients 9

4 (6- 7 oz each) skinless salmon fillets
3/4 cup panko bread crumbs
3/4 cup finely shredded parmesan
2 1/2 Tbsp chopped fresh parsley
3/4 tsp garlic powder
Salt (and freshly ground black pepper, to taste)
1 Tbsp olive oil
1 large egg
4 lemon slices

Steps:

  • Preheat oven to 425 degrees. Spray an oven safe wire cooling rack with non-stick cooking spray and set over a rimmed 18 by 13-inch baking sheet.
  • In a shallow dish toss together panko, parmesan, parsley, garlic powder, salt and pepper (I use about 3/4 tsp salt and 1/2 tsp pepper). Drizzle in olive oil and toss well to evenly coat mixture.
  • In a separate shallow dish beat the egg until yolk and white are well blended.
  • Working with one piece of salmon at a time dredge each side in egg, then transfer to panko mixture and coat and press both sides of salmon in panko mixture (also sprinkle panko mixture over top and press to help stick).
  • Transfer to prepared wire rack on baking sheet. Repeat process with remaining 3 portions (If you have extra breading sprinkle over fillets and gently press down to and even layer so they brown evenly).
  • Bake in preheated oven until salmon is barely cooked through, about 10 - 15 minutes (bake time will vary based on thickness of salmon).
  • Serve with lemon slices for spritzing over.

PARMESAN ENCRUSTED SALMON FILLET

This is a great take on baked salmon with a bit of an Italian twist. For best taste, grate the cheese yourself and use fresh garlic that you mince yourself.

PARMESAN SALMON

This is a great recipe for health watchers. Use low fat mayo or such. I'm not a fish lover and even I liked this recipe!

Provided by Mary the Great

Categories     < 30 Mins

Time 25m

Yield 1-2 serving(s)

Number Of Ingredients 5

1 tablespoon mayonnaise
1 tablespoon parmesan cheese (grated or shredded)
1 green onion (chopped)
1 -2 teaspoon white wine worcestershire sauce (or regular Worcestershire sauce)
1 -2 salmon fillet

Steps:

  • Combine first 4 ingredients in small bowl, adjusting Worcestershire sauce to taste. (I use the regular Worcestershire sauce but I think the White Wine sauce is simply to look nicer!).
  • Mix until smooth.
  • Spray baking pan with nonstick spray.
  • Place salmon fillets on pan and coat with mayo mixture.
  • Bake at 450°F for 12-15 minutes or until fish flakes easily when tested with a fork.

Tips:

  • Choose the right salmon fillets: Look for fillets that are firm and have a bright orange color. Avoid fillets that are thin or have any brown spots.
  • Use a good quality Parmesan cheese: Freshly grated Parmesan cheese will give the salmon the best flavor. Avoid using pre-packaged or shredded Parmesan cheese.
  • Don't overcook the salmon: Salmon is a delicate fish, so it's important to cook it carefully. Overcooked salmon will be dry and tough.
  • Use a non-stick skillet: This will help prevent the salmon from sticking to the pan and breaking apart.
  • Serve the salmon immediately: Salmon is best served fresh out of the oven. If you need to store it, let it cool completely before refrigerating it.

Conclusion:

Parmesan salmon fillets are a delicious and easy-to-make meal that can be enjoyed by people of all ages. With its crispy Parmesan crust and tender, flaky interior, this dish is sure to be a hit at your next dinner party or family gathering. So next time you're looking for a quick and easy weeknight meal, give Parmesan salmon fillets a try. You won't be disappointed!
