1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder

1/2 teaspoon flaky sea salt

4 tablespoons grated Parmesan cheese
2 pounds russet potatoes, cut in 1/4-inch slices
Nonstick cooking spray, for the baking sheets
1/4 cup chopped fresh parsley

Steps:

  • Preheat the oven to 450 degrees F.
  • To a large bowl, add the melted butter, olive oil, garlic powder, onion powder, smoked paprika, salt, some black pepper and 3 tablespoons of the Parmesan, then mix together. Add the potato slices and toss to coat.

½ teaspoon salt
½ teaspoon garlic powder

2 pounds red potatoes, halved
1 tablespoon vegetable oil, or as needed
¼ cup sour cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray; pour in about 1 teaspoon vegetable oil to coat the bottom.

7 medium potatoes (sliced very thin, about 1/8-inch thick)
4 green onions, finely chopped (or us a yellow onion, thinly sliced)
6 tablespoons melted butter
3/4 cup grated parmesan cheese, divided (or to taste)
seasoning salt
black pepper

Steps:

  • Set oven to 400 degrees.
  • Butter a 9 or 10-inch round pie plate.
  • If potato slices are wet, dry with a paper towel.
