½ cup butter, melted
1 sleeve buttery round crackers (such as Ritz®), crushed
1 teaspoon poppy seeds, or more if desired
1 (8 ounce) container sour cream
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese

Steps:

  • Place the chicken breasts into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium, cover, and simmer until the chicken breasts are no longer pink in the center, about 20 minutes. Drain the water, then shred the chicken.

3 boneless skinless chicken breasts, yield three cups
2 teaspoons seasoning salt
1 tablespoon cracked black pepper
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
8 ounces sour cream
1 tablespoon poppy seed
1 1/2 cups buttery crackers, crushed (about one sleeve)
1/2 cup parmesan cheese, divided
1/4 cup butter, melted

Steps:

  • Place chicken breast in lightly greased baking dish, season with seasoned salt, and pepper. Bake at 450 for 30-35 minutes, until breasts are done. Remove from oven and reduce heat to 350°F.
  • In medium bowl add cream soup, sour cream, poppy seeds, and 1/4 cup of parmesan cheese. Stir well.
  • Chop chicken and add to bowl of soup and sour cream mixture. Stir well.

This could be lightened up by using light or fat-free soup, sour cream. I serve this over wide egg noodles along with blueberry muffins and corn or a salad.

1 1/2 lbs boneless skinless chicken
2 (10 3/4 ounce) cans cream of chicken soup
16 ounces sour cream
60 Ritz crackers, crushed
1 tablespoon poppy seed
1/2 cup butter, melted

  • Preheat oven to 350°F.
  • Place chicken in a pan and cover with water and bring to a boil, then reduce heat and simmer until tender and no longer pink(about 10 minutes). Once cool enough cut into bite size pieces(I use my electric knife).
