  • Heat oven to 425°F. Line 15x10x1-inch pan with foil. Brush both sides of chicken with dressing; place in pan.   • Bring large pot of salted water to boil. Heat broiler, with rack set 4 inches from heat. In a medium bowl, whisk eggs. In another bowl, combine Parmesan and breadcrumbs. Season chicken with salt and pepper. Dip tenders in egg, then in Parmesan mixture; place on a rimmed baking sheet. Broil until golden, 2 to 4 minutes per side.

Steps:

  • Bring a large pot of water to a boil, and salt it. Cook the pasta until it is tender but just short of the point at which you want to eat it.
  • Meanwhile, place butter and olive oil in a saucepan large enough to hold the cooked pasta; turn the heat to medium and add the sage. Cook until the butter and oil begin to brown and the sage shrivels.Turn heat down to low.

1 bunch young spring onions or scallions, cleaned and finely chopped (about 1/2 cup)
Salt and freshly ground pepper
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh parsley
3/4 pound penne
1 to 2 ounces Parmesan, grated (1/4 to 1/2 cup, to taste)

Steps:

  • Begin heating a large pot of water for the pasta. Meanwhile, steam the peas over an inch of boiling water for 4 minutes, until just tender. Transfer to a bowl. Add the pea shoots to the steamer and steam 2 minutes, until just wilted. Remove from the heat and allow to cool until you can handle them. Do not discard the steaming water; pour it into a measuring cup. Squeeze out excess water from the pea greens and chop medium-fine. You should have about 1 cup chopped leaves and tender stems.
  • Heat the olive oil over medium heat in a large skillet and add the chopped spring onion or scallions. Cook, stirring, until wilted, about 3 minutes. Add the pea shoots and stir together for about a minute. Season to taste with salt and pepper. Add the peas, tarragon and parsley and about 1/4 cup of the steaming water and heat through.
  • When the water in the pot comes to a boil, salt generously and add the pasta. Cook al dente, using the timing instructions on the package as a guide but checking the pasta a minute before the time indicated is up. When the pasta is ready, using a ladle transfer 1/2 cup of the pasta cooking water to the pan with the peas and pea shoots. Drain the pasta and toss at once with the vegetables and Parmesan.   • Before draining the pasta, reserve a mugful of starchy cooking water, then drain and reserve.
  • While the water is coming up to a boil, place a large skillet over high heat with 3 tablespoons of olive oil.
  • Season the chicken pieces with the poultry seasoning, salt and pepper then add it to the preheated skillet.
  • Cook the chicken until golden brown and cooked through, 3-4 minutes per side.
  • Once the chicken is brown, add the garlic and onions to the pan, and cook until softened, about 5 minutes.
  • Add the tomatoes and cover the pan with a lid.
  • Cook, stirring occasionally, until the tomatoes burst open and begin to release their juices, about 5 minutes (if they haven't started to burst open by that time, mash them lightly with a potato masher or wooden spoon). Season the mixture with salt and pepper.
  • Add the drained pasta and reserved starchy cooking water (about 1 cup) to the skillet with the chicken and tomatoes, and toss over the heat until combined, about 1 minute.
  • Remove the pan from the heat and stir in the basil, arugula or spinach, and cheese.

CHICKEN PARMESAN WITH PENNE PASTA

This is as close as I could get to this dish from a restaurant. It was delicious!!!

3 large chicken breast halves, skinless and boneless
salt and pepper
1 c italian bread crumbs
1 egg, beaten
4 Tbsp butter (i used more than this)
1 jar(s) spaghetti sauce (i use ragu pamesan ramano)
alfredo sauce (i used recipe on this website)
2/3 pkg penne pasta
1 pkg sergento classic 6 cheese italian

Steps:

  • 1. Pound out the chicken breast between to pices of wax paper to about 1/4 inch thick. Salt and pepper. Dip in egg and then coat with Italian seasoning. Fry in butter at a low to medium heat until browned on both sides. Remove from heat and slice about 1 1/2 inch long strips.
  • 2. Cook pasta according to directions on package. Drain and put in the bottom of 9x13 baking dish.
  • 3. Pour Alfredo sauce (I used Easiest Alfreda Sauce recipe from here) and then Spaghetti sauce over pasta, then chicken and then cheese. Bake at 350 degrees for about 20 minutes until cheese is melted and sauces are bubbling. Serve with garlic bread and salad.

1 lb whole wheat penne
1 tablespoon olive oil
3 garlic cloves, sliced
1 (10 ounce) can white cannellini beans, drained and rinsed
2 cups arugula leaves
1/2 teaspoon crushed red chili pepper flakes
1/4 cup parmesan cheese, grated

Steps:

  • Bring a pot of salted water to a boil and add the pasta and cook according to package directions. Drain. Rinse under cold water. Set aside.
  • In a large skillet over medium high heat heat the oil and then add the garlic; sauting until it starts to brown.
  • Stir in beans.
  • Stir in cooked pasta and then add the argula and chile flakes; continue to cook for a minute or so longer or until heated through.
  • Put mixture in a large bowl and sprinkle with the cheese. Toss to combine.

4 large boneless and skinless chicken breasts
1 c bread crumbs
3/4 c grated parmesan cheese
1/2 c fresh shredded parmesan cheese
1 jar(s) classico sun dried tomato sauce ( i couldnt find the sun dried tomato so i used spicy tomato and basil whatever sauce works)
1 can(s) tomato sauce
1 c half and half
olive oil
2 one each green and red bell peppers slice strips
3/4 bag fresh spinach can use frozen
1/2 chopped red onion
2 tsp mince garlic
1/2 tsp oregano, dried
salt and pepper to taste
1 tsp crushed red pepper flakes (or to your liking of spice)
1 box cherry tomatoes halves
1 lb penne pasta

Steps:

  • 1. Cut chicken into chunks. Mix bread crumbs and grated Pars. cheese in large plastic bag. Add chicken chunks and dust all the chicken pieces. Place chicken chunks on olive oil foiled line cookie sheet. Bake 350 turning once and cook thru.
  • 2. Large frying pan add 1 T olive oil and green and red peppers and red onion, saute. Than add jar of tomato sauce, half and half, can tomato sauce, add all the spices, warm on low heat. Than add spinach and halves cherry tomatoes cover and cook on low.
  • 3. Cook penne as directed on package, drain and add sauce. Pour all into a 9 x 13 dish, put chicken on top, sprinkle with Fresh Parsmesan cheese Bake uncover 350 until hot and bubbly.

1 medium onion, chopped
1 (28 ounce) can tomato sauce
1 cup grated parmesan cheese, divided
1/2 teaspoon ground allspice

1/2 cup butter or 1/2 cup margarine, divided
1/4 cup all-purpose flour
2 cups milk
2 eggs, beaten
1 (16 ounce) package penne pasta, cooked and drained

Steps:

  • In a skillet, cook beef and onion until meat is browned; drain.
  • Stir in tomato sauce, 1/3 cup Parmesan cheese, allspice, salt and pepper.
  • Bring to a boil.
  • Reduce heat; simmer, uncovered, for 15 minutes.
  • In a saucepan, melt 1/4 cup butter.
  • Stir in flour until smooth.
  • Gradually add milk; bring to a boil; cook and stir for 2 minutes or until thickened and bubbly.
  • Stir in 1/3 cup Parmesan cheese.
  • Remove from heat.
  • Add eggs; whisk until smooth.
  • In a bowl, combine pasta and remaining Parmesan cheese.
  • Melt remaining butter; add to pasta and toss to coat.
  • Spread 1/3 of meat mixture in a greased 13x9 inch casserole dish.
  • Layer with half of the pasta, 1/3 of meat mixture, and half of the white sauce; repeat.
  • Bake, uncovered, at 350 degrees for 40-45 minutes or until thoroughly heated and bubbly.
