CREAMY PARMESAN NOODLES
MY MOTHER served noodles with cottage cheese as a main dish on many a meatless Friday. I altered the recipe a little as a side dish, but it still makes a good main dish. I especially like to serve it with Swiss steak...the special blend of flavors makes it companionable to any meal, though. -Elizabeth Ewan, Cleveland , Ohio

PARMESAN NOODLES
This is the best parmesan noodle recipe I have ever found. It's not oily like most I've tried. I think the secret is less butter and the addition of sour cream, which you can't really taste. If you served this to someone who didn't like sour cream, I doubt they would know it was one of the ingedients. I serve these with Sandy's Chicken and green beans for a delicious meal my whole family loves.

PARMESAN NOODLES FOR TWO
I used to love the boxed side dish "Noodle Roni Parmesano." I hadn't seen it in store shelves for quite some time, so I played around until I came up with something close to it. As it is just me and my DS at home these days, I intentionally developed the recipe as a side dish for two (or a main course for one!) Although I haven't tried it, I would imagine the recipe would double easily enough.

Steps:
- 1. Drain your noodles and rinse then put in a pan and melt just enough butter to give it a coating. Add cut up fresh parsley and mix.
- 2. Serve on a plate and sprinkle liberally the parmesan cheese on the noodles.
- 3. Serve and enjoy!
Tips:
- Use high-quality Parmesan cheese. The better the cheese, the better the noodles will taste. Look for a Parmesan cheese that is aged for at least 12 months.
- Grate the Parmesan cheese fresh. Pre-grated Parmesan cheese will not melt as smoothly as freshly grated cheese.
- Use a large skillet. This will help to prevent the noodles from sticking together.
- Cook the noodles according to the package directions. Be sure to drain the noodles well before adding them to the skillet.
- Add the Parmesan cheese and butter to the skillet. Stir until the cheese is melted and smooth.
- Add the noodles to the skillet. Toss to coat the noodles in the cheese sauce.
- Season with salt and pepper to taste.
- Serve immediately. Parmesan noodles are best served hot.
Conclusion:
Parmesan noodles are a quick and easy dish that is perfect for a weeknight meal. They are also a great way to use up leftover Parmesan cheese. With a few simple ingredients, you can create a delicious and satisfying meal that the whole family will enjoy.
