This stuff is fabulous! I love to use this to spread on top of warm breadsticks or rolls right out of the oven. Before when I made breadsticks, I could never get a strong enough flavor to come through in my breadsticks. Just slather this on top of or inside of homemade breadsticks or rolls. It's so much better than just sprinkling on Parmesan and garlic powder. You can also add Italian seasoning if you like. If you don't have minced garlic, you can substitute 1/4 to 1/2 tsp. garlic powder. However, I prefer minced with an additional dash of garlic powder. Mmmmmm... I have added to mashed potatoes or to butter up noodles. Make a bunch and store it in the fridge- it'll become a regular staple!

- Set oven to 250 degrees.
- Prepare a large baking sheet/s.
- Arrange the slices on the baking sheet.
- In a bowl combine the melted butter with minced garlic.

- Bring a pan of water to the boil, drop the asparagus in and cook for about 2 minutes or until just, just tender crisp. Plunge into iced water to stop them cooking, then drain.

GARLIC & PARMESAN BUTTER (TO FREEZE FOR FRENCH LOAF)
This is quick and easy to make and have on hand for when you want garlic bread quickly. I make up the garlic / parmesan butter and keep in the freezer until I need it. Then I just take it out to make up and replace when I've finished. It is usually soft enough to spread by the time I've sliced my bread. I use Flora Pro Active Low Cholesterol Spread to make mine but if using butter it will need to be thawed a little longer to spread. I like to use the par baked dinner rolls you buy in the supermarket and slice them in halves lengthwise. This spread is so much nicer than store bought garlic bread, the bottom is still slightly soft and the top toasty. I guessed the servings because it's hard to know exactly. I have also used this in cooked rice, mashed potatoes and on top of freshly steamed vegetables.

- Mix the butter and all of the other ingredients together well and put back in original butter container and freeze. Make sure to label top of container. If you use some of the spread for making garlic bread immediately, it will fit back in the original container.
- Just take container out of the freezer when you want to make up garlic bread. By the time you slice the bread it will be ready to spread depending on what spread you use. Butter will take a little longer but whatever spread you use it can safely be re-frozen.
- To make up: I like to slice my French loaf diagonally and not too thick, If using rolls I cut in half lengthways.
- Spread quite thickly over the entire surface and bake at 150degC (300degF) on baking paper lined tray for about 10 - 15minutes until starting to brown & bubble on top. The bottom will still be reasonably soft and the top toasty.

- 1. Season the chicken with salt and pepper. In a cast iron pan or skillet add 1 tbsp butter. Sear the chicken pieces skin side down until deeply browed. Turn and brown on the other side. Remove chicken to a platter.
- 2. Add the remaining butter to a pan. Once butter has melted add the 20 cloves of garlic. Cook until lightly browned. Add the chicken back to the pan. Pour in the wine and lower the heat to a simmer. Simmer for 10 minutes. With a fork smash the garlic cloves a bit.
- 3. Remove the chicken to a plate. Strain the sauce and discard the solids. Return the sauce back to the pan. Add the chicken back to the pan. Sprinkle with parsley and top with Parmesan cheese. Place under the broiler until the cheese melts. Serve immediately.
