(**I think this is where personal preference and maybe even altitude will effect the outcome of these crackers. I started out with 1 stick of butter, then blended all the other ingredients together. The "dough" was too crumbly and looked like a struesel topping that you would put on top of muffins or a coffee cake. The one stick of butter is what Ina calls for in her recipe. I think this is a typo. I added another 1/2 stick of butter to the flour mixture, and then beat it with the paddle attachment on my mixer. This is when the "dough" balled up and looked right. So, I think this recipe needs between 1 stick and 1 1/2 sticks. You might even get by with 1 1/4 sticks.).
- Add the Parmesan, flour, salt, thyme and pepper and combine.
- Dump the dough on a lightly floured board and roll into a 13-inch long log.
- Wrap the log in plastic wrap and place in the freezer for 30 minutes to harden.

- In a mixer fitted with a paddle attachment, cream the butter until smooth and fluffy. Add the flour, cheese, and pepper and mix at low speed until blended. Form the dough into a disk, wrap it in plastic wrap, and refrigerate at least 2 hours. (The recipe can be made up to this point and kept refrigerated up to 2 days in advance.) Remove the dough from the refrigerator about 30 minutes before rolling out.
- On well-floured parchment paper, roll out the dough into a rough rectangle, a little less than 1/4-inch thick. The dough will be somewhat delicate and may crack in places, but you can just push the edges together with your fingers. Carefully transfer the dough to the cookie sheet and prick evenly all over with a fork. Cut with a pizza cutter or a knife into 1 1/2-inch squares, making a grid.
- Bake in a preheated 375 degree F oven, just until the crackers turn golden, 15 to 20 minutes. As they come out of the oven, run your pizza cutter or knife again along the grid to separate the crackers (the edges will have baked together a little bit in the oven). - Preheat oven to 350 degrees Farenheit or 180 celcius.
- Line a baking pan with parchment paper.
- Sift flour into a bowl.
- Stir in Parmesan and parsley.
- Add egg yolk, olive oil and 2 tablespoons water.
- Stir well until combined.
- Turn dough onto floured surface and knead until smooth.
- Divide dough into two portions.
- Roll out one portion between two sheets of parchment paper until it is 5 centimeters thick.
- Use a 5 centimeter fluted cutter to cut out crackers.

- Heat oven to 160°C (150°C fanbake), with the rack just below the middle.
- Measure the first five ingredients into a food processor or large bowl. Pour 1/2 cup warms water into a one cup measure, stir in the salt and sugar until dissolved, then add the oil. Process the dry ingredients in bursts (or toss them together with a fork), while you add the hot liquid mixture in a steady stream. Add as much of the remaining hot water as you need to form a ball of soft dough.
- Cut the dough into four parts and put three aside in a plastic bag. Roll out the other piece VERY thinly on a floured board, using extra flour to stop it sticking, making an oval shape bigger than an A4 size page. Cut in half (lengthwise), then cut each half into 10-12 tall, thin (pennant shaped) triangles, with alternate narrow bases and points on the cut edge. Perfect shapes aren't necessary and outside edges need not be trimmed. Prick crackers with a fork or skewer, Place on a metal cake rack to bake, crumpling but not folding them.
- Bake them on the rack for 10-15 minutes, until pale gold but dry and very crisp. Lower heat and cook longer if necessary. Repeat with remaining pieces of dough. When cold, store in airtight containers, reheating if crackers soften or storage.
- Flavour develops fully after about 12 hours.

SOUTH BEACH PARMESAN CRACKERS
There are tons of things that are so much better with bread or crackers. But on South Beach, these are clearly off limits on Phase One. I discoved Parmesan Crackers at my Roche Bros. by "The Kitchen Table Bakers", however they are a little pricey. Instead I came up with this recipe to make at home. I also season them with whatever might fit my meal (exp Italian seasonings, diced garlic, tex-mex seasonings and whatever else you can come up with) Be creative! I use them anywhere I would use crackers: with tuna fish, dips, with cold cuts etc. Enjoy! (Note, they will be salty...parmesan is a salty cheese. If you don't like parmesan as a cheese, these aren't for you)
