You can cheat and make this with imitation crabmeat but of course the real stuff is better, if you are using frozen crabmeat make certain to squeeze out any excess moisture before using for this recipe --- if you are a spinach lover then add in the full box of spinach if not just use half a box as the spinach tends be over powering, you can use 1 pound fresh spinach in place of frozen --- you can stuff the shells and refrigerate until ready to bake, and this is also great with a red sauce instead of the Parmesan cheese sauce :)

Steps:
- To make the sauce: in a saucepan over medium heat melt butter.
- Add in flour and whisk for about 3 minutes.
- Add in milk and half and half whisk over heat until bubbly and thickened.
- Add in the Parmesan cheese, salt, pepper and Tabasco to taste; stir until the cheese melts.
- Set oven to 375 degrees.
- Butter a 13 x 9-inch baking dish.
- In a bowl mix together crab, well drained spinach, ricotta, and Parmesan cheese, onions, egg, salt and pepper; mix well to combine.
- Fill each cooked shell with crab/cheese filling using clean hands.
- Place in a single layer in prepared baking dish.
- Cover with the Parmesan cheese sauce (does not have to cover completely!).
- Sprinkle with grated mozzeralla cheese (any amount desired).
- Bake uncovered for about 25-30 minutes (do not over bake!).

- Prepare the tortellini according to the packages directions. Add a little fresh water to the cooked tortellini to keep them from sticking together.
- Thread 24 4-inch skewers with 3 tortellini each. Arrange the skewers on a platter and sprinkle with 2 tablespoons of the parsley.
- In a small mixing bowl, mix together the remaining parsley, oil, Parmesan cheese, lemon juice, garlic, salt and pepper. If desired, puree the sauce in a blender for 1 minute. With a pastry brush, brush the sauce on the tortellini. Reserve the remaining sauce to dip the skewers into the serving.

For some reason we had stopped eating potatoes. I honestly don't know why. But lately I have re-discovered them and this is one we have enjoyed. This is a slight adaptation from "500 Fat Free Recipes." I have added a little fat to it (the original calls for fat free parmesean which I can no longer find), but it is still quite reasonable in my mind. Also, the original called for putting all the cheese on the top. We felt like a little in the middle would have helped, so I am writing it that way. Feel free to play around with it!

- Preheat the oven to 350 degrees.
- Put the milk, the cornstarch, and the 2 kinds of pepper in a pan.
- Cook (stirring frequently) over medium heat until it starts to thicken and bubble.
- Add the chopped onion and set it aside.
- While the milk mixture is cooking, peel and slice the potatoes very thinly.
- Spray an 8x8 pan with cooking spray.
- Start layering the potatoes in the pan.
- When you are halfway done with the potatoes, add half the cheese.
- Then finish with the rest of the potatoes.
- Pour the onion sauce over the potatoes and sprinkle the rest of the cheese on top.
- Cover and bake for 40 minutes.
- Then uncover and cook for 10 minutes more or until the potatoes are tender.

- 1. Melt 1 1/2 Tbsp. butter in a medium skillet over medium-high heat. Sprinkle 2 Tbsp. flour into melted butter, whisking constantly. Cook, whisking constantly, 30 seconds to 1 minute or until mixture is golden and lumpy. 2. Gradually whisk in 1 cup 1% low-fat milk, and bring to a boil. Cook, whisking constantly, 1 to 2 minutes, or until thickened. 3. Add 1/2 cup freshly shredded Parmesan cheese, 1/4 tsp. each salt and pepper, and a pinch of paprika, whisking until smooth. Remove from heat, and use immediately. Spicy Cheese Sauce: Prepare Parmesan Cheese Sauce as directed, and whisk in 1 tsp. hot sauce.
