I happened to catch Down Home with the Neelys the other day and they made this wonderful dish. I couldn't wait to make it and it didn't disappoint! I have used a sliced firm tomato and it works ok, I think the cherry tomatoes are better.

ROASTED BROCCOLI WITH GARLIC AND CHERRY TOMATOES

Roasted Broccoli with Garlic and Cherry Tomatoes image

Broccoli is Spenser's favorite vegetable, and she's partial to this recipe. It's a beautiful dish that's also very flavorful, not to mention healthy.

Yield serves 4

Number Of Ingredients 8

2 pounds broccoli, cut into 2 1/2-inch-long florets
1 medium shallot, roughly chopped
1 pint cherry tomatoes
4 cloves garlic, roughly chopped
1/2 teaspoon crushed red-pepper flakes
1/3 cup olive oil
Kosher salt and freshly ground black pepper
1/3 cup coarsely grated Parmesan cheese

Steps:

  • Preheat the oven to 450 degrees F.
  • Combine the broccoli, shallot, cherry tomatoes, garlic, red-pepper flakes, and olive oil in a large bowl. Sprinkle with salt and pepper, and toss to coat.
  • Spread the vegetables on a large baking sheet. Roast until the stems are tender-crisp and lightly golden brown on the edges, about 15 to 20 minutes. Remove, and sprinkle the Parmesan on top.

Tips:

  • Choose the right broccoli: Look for broccoli with tightly closed florets and a deep green color. Avoid broccoli with yellow or wilted florets.
  • Blanch the broccoli: Blanching the broccoli helps to preserve its color and nutrients. To blanch the broccoli, bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes, or until they are tender-crisp. Immediately transfer the broccoli to a bowl of ice water to stop the cooking process.
  • Use fresh cherry tomatoes: Fresh cherry tomatoes add a burst of sweetness and flavor to the dish. If you don't have fresh cherry tomatoes, you can use grape tomatoes or chopped Roma tomatoes.
  • Don't overcook the tomatoes: Cherry tomatoes cook quickly, so be careful not to overcook them. Overcooked tomatoes will become mushy and lose their flavor.
  • Use a good quality Parmesan cheese: The Parmesan cheese is one of the key ingredients in this dish, so it's important to use a good quality cheese. Look for a Parmesan cheese that is aged for at least 12 months. Freshly grated Parmesan cheese is best.
  • Serve immediately: This dish is best served immediately after it is made. The broccoli and tomatoes will start to lose their texture and flavor if they are allowed to sit for too long.

Conclusion:

This Parmesan broccoli with cherry tomatoes is a delicious and healthy side dish that can be served with a variety of main courses. It's easy to make and can be ready in under 30 minutes. The blanched broccoli retains its bright green color and crisp texture, while the cherry tomatoes add a burst of sweetness and flavor. The Parmesan cheese adds a rich and nutty flavor to the dish. This dish is a great way to get your daily dose of vegetables and is sure to be a hit with your family and friends.
