CHICKEN PARMESAN STICKS
Steps:
- Preheat the oven to 400 degrees F. Line a baking sheet with a wire rack.
- Add the flour to a pie plate or dish and season with salt and pepper. Beat the eggs in a second pie plate. Mix together the panko, Parmesan, parsley and red pepper flakes in a third pie plate.
- Slice the chicken breasts in half horizontally. Slice each half into 2 long strips (for 4 strips per breast). Sprinkle the chicken on both sides with salt and pepper. Skewer each piece of chicken and then dredge each through the flour, then the egg and finally the panko. Place on the prepared baking sheet and brush the chicken sticks lightly with the melted butter.
- Bake until golden brown and fully cooked, 20 to 25 minutes. Serve with warm Fresh Tomato Sauce.
- Combine the olive oil, red pepper flakes and garlic in a saucepan. Saute over medium-high heat until the garlic is fragrant, about 3 minutes. Add in the tomatoes, salt and pepper to taste, bring to a simmer and cook for about 10 minutes. Tear the basil leaves and stir them into the sauce.
PARMESAN CHICKEN STICKS
Steps:
- Lay the chicken breasts on a cutting board and slice each diagonally into 4 or 5 large strips.
- Combine the flour, salt, and pepper on a dinner plate. Beat the eggs with 1 tablespoon of water on a second plate. Combine the breadcrumbs and Parmesan on a third plate. Dredge the chicken breasts on both sides in the flour mixture, then dip both sides into the egg mixture and roll in the bread-crumb mixture, pressing lightly to coat.
- Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large saute pan and cook the chicken strips on medium-low heat for about 3 minutes on each side, until just cooked through. Don't crowd the pan. Add more butter and oil and cook the rest of the chicken breasts. Serve each strip on a skewer or stick.
- You can keep the chicken breasts warm for about 15 minutes on a sheet pan in a preheated 200 degree F oven.
PARMESAN AND POPPY SEED STICKS
To keep the "twist" in the cheese straws, it is essential that they be very cold when they go into a very hot oven.

Steps:
- Thaw puff pastry according to package instructions, just until it is soft enough to cut. (This should take about 20 to 30 minutes at room temperature). Puff pastry should still be very cold. Preheat oven to 425 degrees with two racks.
- In a small bowl, mix to combine cheese and cayenne pepper. In a second small bowl, combine sesame and poppy seeds with salt, and set aside.
- Arrange cold puff pastry on work surface. Cut puff pastry lengthwise into two equal 5-inch-wide halves. Brush each half with beaten egg. Sprinkle one half with cheese mixture and other half with seed mixture. Using a pastry cutter or knife, cut each half crosswise into twenty 1/2-inch strips.
- Working one at a time, twist each strip into a double spiral, and transfer to parchment-lined baking sheets, 1/2 inch apart. Using your thumb, press the ends of the strips down into the parchment to prevent unraveling. Transfer to freezer, and chill until very firm, about 20 minutes. (Refrigerator may be used for chilling but will take at least twice as long.) Check dough while chilling to make sure it stays twisted.
- Transfer the straws to the oven, and bake until golden, rotating baking sheets halfway through cooking time for even browning, 10 to 15 minutes. Cool the straws on a cooling rack.
Tips:
- Use fresh parsley: Fresh parsley adds a bright, herbaceous flavor to the Parmesan and pepper sticks. If you don't have fresh parsley, you can substitute dried parsley, but use only half the amount.
- Don't overmix the dough: Overmixing the dough will make the Parmesan and pepper sticks tough. Mix the dough just until it comes together.
- Chill the dough before baking: Chilling the dough before baking helps the Parmesan and pepper sticks to hold their shape. Chill the dough for at least 30 minutes before baking.
- Bake the Parmesan and pepper sticks until they are golden brown: The Parmesan and pepper sticks are done baking when they are golden brown. This usually takes about 10-12 minutes.
- Serve the Parmesan and pepper sticks warm: The Parmesan and pepper sticks are best served warm. You can serve them with your favorite dipping sauce, such as marinara sauce or ranch dressing.
Conclusion:
Parmesan and pepper sticks are a delicious and easy-to-make snack or side dish. They are perfect for parties or potlucks. With a few simple ingredients, you can make these tasty treats that everyone will love. So next time you're looking for a quick and easy snack, give Parmesan and pepper sticks a try. You won't be disappointed!
