PARMESAN AND GARLIC FRIES
This is my go-to recipe when I want to make oven fries. It's full of flavor and the hardest thing about it is cutting up the potatoes, which you can leave unpeeled to make it even easier.

Steps:
- Preheat oven to 425º.
- In a large mixing bowl, place the cut potatoes and pour the olive oil over the top.
- Sprinkle on the garlic, thyme and seasoned salt. Mix well until the potatoes are evenly coated.
- Spread the potatoes on a baking sheet in a single layer.
- DO NOT throw away the oil that is left in the bowl.
- Bake 30 minutes, turning the fries over halfway through (I didn't do this because I forgot and I don't think it really matters if you do or you don't).
- After 30 minutes of baking, return the fries to the bowl with excess oil and sprinkle with the Parmesan cheese and parsley.
- Toss to coat and return to baking sheet and bake for another 10 minutes.
- If desired, sprinkle fries again with a few shakes of Parmesan and a few shakes of seasoned salt.

Tips:
- Use the right potatoes: Russet potatoes are the best choice for fries because they are starchy and have a low moisture content. This makes them crispy on the outside and fluffy on the inside.
- Cut the potatoes into even-sized pieces: This will help them cook evenly. If the pieces are too thick, they will not cook through, and if they are too thin, they will burn.
- Soak the potatoes in cold water for 30 minutes: This will help to remove the starch from the potatoes, which will make them crispier.
- Dry the potatoes thoroughly before frying: This will help to prevent them from sticking together and will also help them to crisp up.
- Use a high-quality oil for frying: Olive oil or avocado oil are good choices. Avoid using vegetable oil or canola oil, as these oils can impart a greasy flavor to the fries.
- Fry the potatoes in a single layer: This will help them to cook evenly and will prevent them from steaming.
- Season the fries with salt and pepper immediately after frying: This will help the seasoning to stick to the fries.
- Serve the fries with your favorite dipping sauce: Ketchup, mayonnaise, or ranch dressing are all popular choices.
Conclusion:
Parmesan and garlic fries are a delicious and easy-to-make side dish. They are perfect for any occasion, from a casual get-together to a fancy dinner party. With just a few simple ingredients, you can make these fries that are sure to impress your guests. So next time you are looking for a side dish that is both delicious and easy to make, give parmesan and garlic fries a try. You won't be disappointed.
