CREAMED CORN WITH PARMESAN

Time 20m

Number Of Ingredients 6

2 tablespoons vegetable oil
6 cups fresh corn kernels (about 8 ears)
Coarse salt and freshly ground pepper, to taste
3/4 cup heavy cream
1/4 cup homemade or low-sodium store-bought chicken stock
1 cup finely grated Parmesan cheese (about 3 ounces), plus more for sprinkling (optional)

Steps:

  • Heat oil in a large saute pan over medium-high heat until it starts to shimmer (but not smoke), about 2 minutes. Add corn, and cook, stirring occasionally, until soft and slightly browned, 7 to 8 minutes. Season with salt and pepper.
  • Add cream and stock, and cook, stirring constantly, until thickened slightly, 2 to 3 minutes.
  • Remove pan from heat, and stir in Parmesan. Transfer to a serving dish, and sprinkle with more Parmesan if desired.

Tips:

  • Use the freshest corn possible. Fresh corn has a sweeter flavor and a more tender texture than corn that has been sitting around for a while.
  • Don't overcook the corn. Corn should be cooked until it is just tender, but not mushy. Overcooked corn will lose its flavor and texture.
  • Use a variety of cheeses. Parmesan cheese is the classic choice for creamed corn, but you can also use cheddar cheese, mozzarella cheese, or even goat cheese.
  • Add some bacon. Bacon adds a smoky flavor and a crispy texture to creamed corn.
  • Season the corn to taste. Salt and pepper are the basic seasonings for creamed corn, but you can also add other spices and herbs, such as garlic, onion, or chili powder.
  • Serve the corn immediately. Creamed corn is best served hot and fresh from the stovetop.

Conclusion:

Creamed corn is a delicious and versatile dish that can be served as a side dish or a main course. It is easy to make and can be customized to your own taste. With a few simple ingredients and a little bit of time, you can create a creamy and flavorful dish that will please everyone at the table.
