  • To butterfly the flank steak, start with the meat grain running up and down in front of you. With your knife, begin cutting the meat in half. Essentially, you want a thinner, larger flank steak. 1 teaspoon smoked sweet paprika
1 1/2 pounds flank steak
Kosher salt and freshly ground black pepper
1 1/2 teaspoons coriander seeds
1 1/2 teaspoons cumin seeds
1/4 cup chopped unsalted cashews
1/4 cup chopped raw pistachios
1/2 teaspoon crushed red pepper flakes
1 tablespoon sesame seeds
Cooking spray or vegetable oil, for the baking sheet
1 tablespoon chopped fresh mint, plus whole leaves, for serving, optional

Steps:

4 garlic cloves, minced

  • Position an oven rack 5 -to -6 inches from the broiler unit, and preheat the broiler. Line a broiler pan or baking sheet with foil, and set the broiler insert on top of the broiler pan if using. Put the pan on the oven rack, and preheat until hot, about 5 minutes.
  • Stir together 2 tablespoons oil, 1 teaspoon each salt and pepper in a small bowl. Rub the mixture on both sides of the steak. Put the steak on the preheated pan and broil (without flipping) until nicely browned and firm, with some give when pressed in the thickest part, 6 to 8 minutes for medium-rare. Let the steak rest for 10 minutes.
  • While the steak cooks and rests preheat a wok over high heat for 10 minutes. Have 2 tablespoons of cold water in a small bowl next to the wok. Add the remaining 2 tablespoons oil to the wok, and just as it starts to smoke, add the garlic and ginger. Cook, stirring constantly, for a few seconds until they start to brown, and then immediately add the water. Add the watercress and cook, tossing just until it starts to wilt, about 1 minute. Add the oyster sauce and toss to coat. Remove from the heat and toss for another 30 seconds or so, until the watercress is completely wilted (the stems should be bright green and the leaves darker but not black).
  • Thinly slice the steak against the grain and serve with the watercress and rice if using.

2 tablespoons vegetable oil, 2 turns of the pan
4 slices hickory or applewood smoked bacon, chopped
2 medium onions, chopped
2 to 4 ribs celery, chopped
1 bay leaf, fresh or dried
4 sprigs fresh thyme or 1 teaspoon dried
2 tablespoons all-purpose flour
1 cup dry red wine, eyeball it
1 rounded tablespoon spicy brown mustard or grainy Dijon mustard
1 quart beef stock or broth, available on soup aisle in market
1/4 to 1/2 teaspoon liquid smoke flavoring, optional -- for extra smoky stew
Salt and pepper
1 cup chopped watercress
1 box biscuit mix, 8 1/2 ounces (recommended: Jiffy Mix brand) prepared to package directions

  • Heat a heavy bottomed large, wide pot or pan over high heat. Cut the sirloin into large cubes. Add oil to the pan and heat. Add meat and caramelize for 2 minutes on each side; remove from pan to a shallow dish and cover loosely with foil. Reduce heat to medium high. Season with salt and pepper, to taste. Drop large spoonfuls of watercress biscuit mix into the pan onto the surface of the stew and cover the pan. Cook 8 minutes until dumplings plump. Serve stew with dumplings.

1 tablespoon coarsely ground black pepper

1/4 cup dry red wine
2 tablespoons unsalted butter
2 large bunches watercress, stemmed

1/4 cup balsamic vinegar

1 teaspoon smoked sweet paprika
