Number Of Ingredients 8

1 1/4 cups all-purpose flour
1/4 teaspoon salt
3 whole green cardamom pods, seeds removed and crushed, pods discarded
1/4 cup sugar
2 cups milk
2 large eggs
3 tablespoons unsalted butter
Lingonberry jam, for serving

Steps:

  • Preheat oven to 425 degrees. Whisk together flour, salt, cardamom seeds, sugar, milk, 1/4 cup water, and the eggs in a large bowl. Let stand, covered, 20 minutes.
  • Heat a 12-inch cast-iron skillet in oven 10 minutes. Melt butter in skillet. Pour in batter; bake until puffed, about 25 minutes. Cut into wedges; serve with jam.

This is another old recipe of my mom's. It is baked in the oven and is served for breakfast or brunch. Good anytime, actually! Enjoy.

Number Of Ingredients 5

4 eggs
3 c whole milk
1 1/4 c all purpose flour
1 tsp salt
1 stick margarine or butter

Steps:

  • 1. Preheat oven to 375 degrees. Beat eggs & add 1/2 cup of the milk. Gradually add the milk, flour and salt. Beat until thick & smooth.
  • 2. Melt the margarine in a glass bowl and pour into your 9 X 13 pan. Pour the batter over the melted margarine.
  • 3. Bake at 375 for one hour. Sprinkle sugar & cinnamon on top when it comes out of the oven. It will be very "puffy" when you take it out of the oven and it will "cave in" after awhile....but it is supposed to do that. Serve with jam, syrup, honey, berries ... you can use your imagination what to put on top. Yum.

Tips:

  • Use a well-seasoned cast iron skillet. This will help the pannukakku cook evenly and prevent sticking.
  • Be careful not to overmix the batter. Overmixing will make the pannukakku tough.
  • Let the batter rest for at least 30 minutes before cooking. This will allow the gluten to relax and will result in a lighter, fluffier pannukakku.
  • Cook the pannukakku over medium heat. This will help it cook evenly without burning.
  • Do not flip the pannukakku during cooking. Flipping it will disturb the delicate crust.
  • Serve the pannukakku immediately with your favorite toppings.
